We're scheduled to hit 30 late November/early December. We started in the spring of 2011. So...roughly two and a half years. Playing almost every week.
I get some weird stares when I mention I give out one level-up a session

That sucks, but is reasonable. I believe the first season of Encounters was basically like that. You played a long session (3 combat encounters, at least one skill challenge, and two-four RP scenes), and leveled between sessions.
We manage a level every 3-5 weeks, depending. Usually closer to 5, but I'm going to try to push that during Epic. They already have a relatively low threat level. I think the most dangerous situation we've ever been in was when the thief, the psion, and my character (the defender) only had 1 healing surge each.

although synthesist is hella top tier of brokeness
my favorite DM so far encountered a moment at the beginning of a session in which someone revealed that he had figured out a way to get up to like 30 strength at only level six. He might have been fudging some rules, and he had spent all his cash on buying permanent spell effects.
So the DM crushed the character under a colossal piece of masonry broken loose by a trebuchet
I like object lessons, especially object lessons that involve giant objects
The team went into the Savage Land, flown in on a jet piloted by a SHIELD dude. Of course, since this is the Savage Land, no one ever gets to land an aircraft properly. They get shot out of the sky and then go from bad to worse as they are attacked by raptors then a T-Rex then the mutates in succession.
The entire time, from the actual crash through all the fighting, the group busted their asses to keep the redshirt pilot safe. Like, intentionally taking hits and blowing resources on keeping the dude alive.

Well I haven't run Pathfinder on its own before, but I know 3.5 pretty well, and this isn't a big step from that. I say everything is legal as long as its official. Its going to be point buy, but I'm not sure the amount yet. Only Pokeballs and Home Run Bats.
I had a game once where every player had a Synthesis Ediolon that they could use in a limited capacity. It kind of worked like Xenogears or White Knight Chronicles.

standard point buy is 20 points using the official point buy method

Yeah but I'd say that you have a relatively high level of system mastery. You're probably more familiar with more origins than anybody I know, at least as far as how much people talk about it. And you probably know the monsters better as well.

Honestly, it's next to impossible to go into a setting and play out 30 whole levels.
Like, even with good friends who meet once every week it would take more than a year. It's hard to keep it going for that long.

Well, yeah, there are obviously even better ways to break it.
But Synthesist is one of the easiest methods, if not the most powerful.
