I had a surprisingly shit run this morning, and it wasn't even hot. Did 6km but had planned to do 8, muscles were all fine but my lungs were throwing up a shit fit. Maybe it was the weather/atmosphere

Okay, typically shin splints are caused by an excessive amount of activity after a period of non-activity. There could be several reasons why you're suffering here. My first reaction to shin splints (i get them too!), is to assume that my calves are tight. So I do that stretch, by pushing on my toes and try to force the toes towards my knee (obviously they aren't going to go very far, but it does provide relief for me)
Another potential reason your shins are causing you problems is while you're running, you're striking hard and flat footed, another problem I've had in the past. Maybe some form of insole replacement would benefit you, maybe not. If you are running/landing "heavy" then I don't see how minimalist shoes would help.
Besides stretching (and that's not the only stretch you can do, feel free to look up more, but that is my go-to), rest and ice are another route to take. I think when you've recovered, start with short distances and slowly increase the length of your runs and focus on how your feet are striking the ground. Maybe just some body weight calf raises throughout the day could help, while you're at home or at work.
But if your shins are bothering you, take a break from running. That's really the best advice I've received and I can pass it to you.

You may be warm, but I would have a hard time imagining that your Insanity workout has any dedicated static stretch of any of the muscles surrounding the tibia, which(in my opinion) would provide the most beneficial relief AFTER the workout (and before the run).

Shin splints are usually caused by doing too much too soon (TMTS), and incorrect running technique (mostly over striding). Could be a combination of both of these things.
You can eat whatever you want for breakfast? I mean eggs is the traditional high protein breakfast food but if that's not what you want then fuck it, eat a steak. Or some chicken. Or some pork. Or some bacon wrapped scallops.
I was going to suggest a veggie protein shake made with Rice/Almond/Soy milk, with a side of Cheerios. That would likely only get you to around 25-30 depending on portioning, though.
A lot of the time I skip breakfast since I tend to get hungry at around the same time later in the day whether or not I have it. I don't have any real problems with energy when I do this, though I know it fucks with some people.
Ok I'm gonna start up Insanity and work on my diet. Need to get healthier and I want to drop some weight for a beach week/wedding in late May and I've been putting it off too long.
Any suggestions on a basic diet to help me achieve this?
Yeah, if it does, and its not laden with "For lunch, have one of our proprietary lunchtime replacement bars" sorts of things, then I'd say start with that.
Otherwise, if you want, what is your diet now, and what do you want to get better at when it comes to eating? portion size? not eating junk food?
My diet now is largely unsupervised. Basically a yogurt for breakfast. Sandwich or cafeteria meal for lunch. Some kind of thrown together or ordered meal for dinner. I'd like to get better with portion size and cutting out the junk. I've been working on these recently.
Basically something simple that will help me cut some weight. I don't mind monotony in diet, as long as it covers all the normal nutritional needs. Just as a start to thinking along these lines I was planning on:
Fruit Breakfast maybe Hardboiled Eggs every now and then
Protein Shake lunch
Mixed nut snack
Some healthy meal along the lines of chicken/veggie for dinner.

You didn't mention it, but if you are drinking sodas, cutting them out of your diet can make a huge difference. Fruit juice can be just as bad depending on how much you drink.
Drink coffee or tea if you need caffein, but replace all your other drinks with water. Otherwise you're just drinking a bunch of calories.
