My friend and I have been talking a lot about the plot of a shared project, which leads to some pretty lengthy convos. But when I unlock my iPhone, it always jumps me to the end of the conversation, and I'm trying to reference older messages. Is there any way to save this shit to a flat file I can read on my computer?

For OSX, I'd recommend PhoneView, it'll let you export your conversations as pdf, or even a CSV.
For more, including some cross-platform ones, Ars Technica put out a solid review of four different apps.
They're all a little bit overkill for just exporting texts, but you might find the other features useful, too.
