Potato soup is an excellent meal. It's always great and it scales up or down in cost. Like, if you don't have a lot of cash, all you need is potatoes, onions, water, and cream. Plus a few other basic staples like salt and pepper. But if you want to go for the extra money you can also put in leeks, chicken stock, and bacon. Or cheese!
I make odd food sometimes. One of my signatures is clam risotto (Or pilaf), with crisped basil-y whitefish.
That sounds pretty damn tasty.
As far as cheese and crackers go, pay a little extra and get some good cheese and some good crackers to greatly improve the experience. If you live in the NW, I highly recommend Wisecrackers:

go outside and build yourself a fire, put a pan on some sort of contraption, slice up some potatoes, slice up some onions, and throw them in the pan. throw some salt and pepper in there and you got fuckin hash browns man.
you can put ketchup on'em too.
you see, making them over an open flame makes them a billion times better.

You know what else is a fast, filling snack? A big handful of rotting garbage. That doesn't make it edible. Crackers + hot dogs + cheese + ketchup? Why not just go for the bun? I'm pretty sure slapping that all in a bun would be a good bit faster, and maybe even more filling, than cutting up weenies and cheese and laying them on individual crackers. I'm inclined to agree with everyone. I would sooner eat grass.
If any of you remember the 8 patty burger I took down, this is the step up to 10. Mine's on the left, and had the mistake of not being ordered well-done. About 9 1/2 patties stayed down that night.
As for midnight snacks, bacon swiss sandwich. Hot bacon, cold cheese.

I can't believe I've never seen these before.
I know they have them at QFC and Trader Joe's also carries them. Not sure about any other markets though. They're a local company that's been gaining a lot of popularity because their crackers are so damn good. I love the roasted garlic and rosemary crackers with some good hummus.
