I'm also real curious how much of the story/world content was decided entirely by Yoshi-P, and how much of it is leftover plans that 1.0 team was going to roll out in future expansions/updates.
I'm curious... where did the Helm of Light originate for the Hero of Light? It's a badass looking helmet, but it never appears in the game. Having recently finished FF1, that helmet is nowhere to be seen. The only place I even see it is in the WonderSwan logo of the game.
Well, I don't know much about the mechanics yet, but from what I understand, switching your main hand weapon automatically changes jobs for your character. So, using a sword and a shield will make you a gladiator or paladin, but equip a lance you find, and you'll suddenly be a dragoon (some classes require unlocking though and aren't immediately available on character creation.) Stats still favor certain classes over others, though, so if you're decked out in your best Marauder gear and suddenly switch to a Summoner weapon, you're probably going to be a pretty bad Summoner to start out.
But to answer your question; yes. You shouldn't have to create alternate characters to play as different jobs. Only for different aesthetics, or for storage space. From what I understand it probably takes a LOT of time and effort to get every job up to accessible levels of effectiveness on a single character
The way this game is setup, you should not need to ever roll more than 1 character, unless you just want to create a new character of a different race/gender for aesthetic purposes.
Your character can multi-class into any class/job you want starting at level 10. You have to raise your original starting class to 10, at which point you can visit a Class Guild and change classes. As @Javen stated, equipping a weapon will automatically change your class. The game allows you to setup gear-sets via the interface to quickly swap out your gear to match your job changes. They have a special tab in the inventory just for storing your gear, and your gear does not count against your general inventory spaces. It's a brilliant system.
Basically, play what you want, and if you need to change your role, just quickly swap weapons and you will suddenly go from being a tank to a healer, or whatever.
I'll probably end up creating two characters a melee and a magic user and have them cover the spectrum of what I want to play. May not be perfect stat wise, but it sounds so amazing and convenient.
I literally only played the game for 3 hours during Beta 3 or whatever and it's all I can think about.

Don't forget about the gathering/crafting classes too. They're not 'extra' like in other MMOs. You're either a Miner or a Gladiator, not both (as an example). Well at least not both at the same time.

even then the stat points you get on leveling up are for that class alone. So you can have a stat perfect pug and a stat perfect say black mage

In the recent Q&A they addressed respeccing stats specifically and said that while will provide means to do so it will take a lot of investment so it's not like you'll be raiding Bahamuts Labyrinth one day as a fully specced Marauder than a Summoner the next.
You might earn new stats for each job (I'm not even sure of that) but I think your stat application is universal either way.

Yes, but I believe the stat gains stay between classes.
As far as I can tell, attribute caps are based on highest class, whereas gains can come from any class. Not sure if that's 100% correct.

Yeah, you start earning them after level 10. You don't have to apply them immediately though; and since they're (currently) permanent, you might hold off on using them until you are set on a specific job/class path.
As soon as I saw the artifact armor for Paladin, I was set.
I will be going full bore Gladiator until 30 and then Conjurer to 15. I'm not interested in any other classes until I've unlocked Paladin and gotten my artifact armor.
The second class I unlock will be Dragoon most likely, and it will at least share strength as a primary stat.

I thought that stat allocations were by class
and that the issue was that the arcanist class has two jobs, so respeccing between them would be an issue
But don't both Summoner and Scholar draw from approximately the same stats, even if it isn't exact? There will be at least some overlap in assigned stats, and then gear will help cover any deficiencies. I mean, sure, if you are min/maxing you will want to re-allocate. But I'd imagine that for as much as 90% of the game it won't matter.
And maybe Summoner/Scholar won't be an exact fit. But you ought to be able to go from Summoner to Black Mage with no problem. Or White Mage to Scholar. Or Paladin to Warrior.
I guess it depends on what they do when they add more Jobs.
I've been trying to think of other classic FF Jobs that would fit within the current system. And I'm having a difficult time with a couple of them. What could they add as an alternate Job to Lancer? Dragoon is the iconic lance class, and I can't think of anything that would fit.
They could add Red Mage to Thaumaturge and required THM 30, CNJ 15.
Time Mage could be the opposite and require CNJ 30, and either THM 15 or ARC 15
Blue Mage would fit under Thaumaturge as well.
But the other iconic physical classes would almost need a new base class before they could work. For example, you could add an agility/dual wield melee class and then branch into Thief or Ninja.
They could make a Brawler class that would be an alternative to Monk under Pugilist. Monk would focus more on discipline, precision, and technique. Brawler would be more like Zell or Snow and focus on just raw power and face-punching.
I guess if they wanted to attach Blue Mage to Lancer that might work. They could model it after Khimari. Blue Mage would require Lancer 30 and a magic class at 15.
Here's the pertinent question to stat allocation in the latest Q&A:
Q41: I heard that you can reallocate your attribute points, but will this be something you can do easily multiple times?
A41: It won’t be something you can do so easily. For example, it’s not like you will be able to allocate them so today you can challenge the Great Labyrinth of Bahamut as scholar, and tomorrow allocate them so you can go as summoner.

So, yeah, I guess it would make sense to have stat allocation be per-class. That's nice actually. When I was playing earlier in the beta I was just sitting on my stats I was earning with THM because I wasn't sure if I wanted to stick with a caster; but now I know that's fine!

Here's a question for people who know more:
My understanding is that you can play multiple classes if you switch gear and they level up separately correct?
If so, how viable is this? Can I play a Dragoon and a Summoner? Or am I better off creating a separate character for Summoner?
Or if it is valid, can I create an uber character that could potentially play every class and never need to create a new one?

I on the other hand was constantly reminded of it every day when it limited me to gathering for 1-2 hours a day.
