    Actually it has to do with the altitude. Being over a mile up screws with baking and rising crust. So that is why crust isn't ever the way it is out East.

    I fully accept bake goods in high altitude are worse than low humid climates. But you can get some good stuff but usually it is different than out East.

    Also sourdough works much better than normal dough at altitude.
