is there some way to get something in orbit around kerbin to stay pointed in a certain direction relative to the planet, like looking directly at it or away from it? The SAS just makes it stay still relative to the sun, I think.
"target" the planet while in flight, then point yourself towards the target marker on your flight ball. I think SAS will lock on to that the same way it locks on to maneuver nodes.

I got it too. It's neat, though very buggy, and they're pretty clearly in the bugfixing/add tutorials and flavor text phase. The game itself seems fairly complete, all the stuff around it needs some work.

the Byzantines and the Nazis certainly didn't surrender their last major city
It's because of the way Total War works. A settlement can either be a minor town, a major town or three different kinds of cities. You need at least a city to train legionaries, and each level of city gets you a new kind. Each level of legionary is a shitload better than the last. If you want to take someone out then, you get your best army and you roll over their largest cities as fast as you can, ignoring the small settlements. If you come at them from a weird angle they might not even be that well defended, because troops are always massed on their territorial lines. Once you have all their huge cities, they can't field elite units and you can quickly retrain your elite units using their facilities. At that point you're just rolling over them, they can't really defend themselves.
The tedious part is that towards the end, settlements are constantly rioting or rebelling and having to be recaptured. It's historically accurate, but annoying as shit. There comes a point with some cities where you can't possibly keep them happy and just have to resign yourself to letting them rebel and then killing the entire population so they can build up again. Honestly it took way too long to beat and I wasn't really having fun towards the end, but I'm kind of compulsive about finishing stuff like this. I should stay away from these games.

It's like the Mount and Blade endgame.
Once you've completed about 60% of the task of conquering the world, the game stops being challenging and instead becomes tedious.
Almost a successful landing. Jebidiah Kerman WOULD be missed, but he managed to walk away from the crash site- which rendered the orbital pod into dust.
President Dubh has assured the public that the mechanical error in the parachute deployment will be solved by next launch.
