San Andreas, the only one with bikes in it, literally forces you to ride one in the first mission.
They were mostly like motorcycles but slower and more maneuverable. Also you could put some weight into your pedals by mashing X but you had limited stamina to do so (and this was tied to SA's stat-building stuff).
