Streetpassing will get you Pokemiles, which you can trade for various items. You can also get them by trading with someone over the internet - the greater the distance between the two players doing the trade, the more Pokemiles they will get.

All pogeymuns have Abilities. Most have a possible selection of two, in fact, but can only ever be obtained with either one ability and then that's that. The Hidden Ability is a third Ability that was introduced via Gen V's Dream World. This is why they are also known as Dream World Abilities. These are somewhat special, in that they are supposed to be fairly rare due to their gated method of acquisition - i.e., you get them in Pokemon obtained from the soon to be defunct Dream World, special events, and if I'm not mistaken a few can be found via Caves in B2W2. Hidden Abilities usually sport somewhat unusual or very specific functionality. On some mons they end up fairly useless in the grand scheme of things, but for the most part they're still fun and lend themselves to quirky (and sometimes VERY powerful) strategies.
And I think that about covers the basics.
Fairly credible leaks and rumours have it that the new generation has introduced a special item that lets you switch abilities when the item is used, but the exact mechanics are still somewhat unknown. I've seen some people say it's a Hold Item, others that it is a strictly one time in-battle use thing similar to most Pokemon consumables, like Potions, and some have theorised that you pop it once on a poke outside battle and then you choose a new Ability for it.
Bulbapedia should have some more details once the game officially rolls around.

I haven't played a Pokemon game in ages so pretty much all the Pokemon will be new for me, usually an hour long wait for my train would suck but I don't mind tonight!
Is it known how the version specific mega evolutions work? Is it separate items, with the version deciding which you get, or is it a single item, with the version deciding what it does?

Yeah, they just say "Oh, seems like you don't have any flying Pokemon. GET THE FUCK OUT"

There may be a new hold-item that disincentivises supereffectives, especially against Sturdy things. The holder is boosted when its weakness is hit.

No, he'll come with his Hidden Ability right off the bat, no setup required.
You could, however, conceivably change its ability over and back again if you so fancy with the new item.
