Crafting low level stuff is only done to get to higher level stuff, so the only low level stuff you can really find cheap is the most efficient recipes
it would be cool if the low level stuff was actually every useful or remotely relevant to the player as they were crafting it while leveling up
but man those recipes basically haven't changed since 1.0
the worst example is Enchanting, grats on reaching level 20, here's your +1 stam to bracer!
glyphs are a interesting example, since most go for less than the material cost. That ...uh...wasn't always the case.
I'll admit, I have no idea how eve's economy works, so I can't apply that in a useful way. I've seen briefly how diablo, TOR and GW2 works, and I think GW2 is most interestingly applicable to this situation, although even that isn't a good fit since WoW limits postings to 48hours (and that time limit probably does a ton to help price increases occur)

I think you overestimate how much people value their time, and "buy up the entire supply and re-post at X or higher" is definitely not a thing that would be able to happen with one auction house.

If you don't mind a bit of work you can hold nigh-infinite amounts of stuff in your mailbox. You could probably have a billion gold waiting there if you wanted. Just resend it every other month
Shaman is great for me because you get the healing effectiveness of the other classes with many fewer bullshit buttons to worry about.
Keep your healing stream on cooldown, cast earth shield rarely, and a couple riptides up, and then it's just a choice of healing surge, healing wave, or chain heal. The simplicity really goes a long way toward making healing much less frustrating.

on the one hand, I enjoy the tanking as much as Warrior, on the other hand, it's identical roles and I have always wanted a healer
just not sure I would ever really play a Shaman
or paladin anything
i haven't played one at the end game but everything I've done with them has been thoroughly devoid of challenge or interest
elemental and enhancement are both fun dps specs though so I think I need to buck up and get those last 19 levels on her
