So how are Namekians in this game? Do they get any cool Namekian moves like Special Beam Cannon or Hellzone Granade?
Because I love me some Namekians.
Namekians have faster stamina regeneration which helps them get out of combos and super/ultimate attacks more often
They also start regenerating if their health falls under 70% and any items they use are more effective
They seem like a popular option for builds relying on basic attacks, although you can build them any way you want, you can also get the Special Beam Cannon fairly early in the game (humans do more damage with their basic attacks when their Ki is full, but Namekians might outlast them)

Not to poop on any particular parade, since it probably doesn't hugely matter in the long run, but Namekians have the lowest stats in the game.
They have the second-highest health after male Buus, they're just mainly defensive (and male Saiyans for example still have lower super stats than Namekians have)
Having a super attack like Milky Cannon or an ultimate like the Scatter Kamehameha helps a lot
Which PQ do these drop in? Or can you just buy them?

Is there actually any benefit of sticking with one mentor? I've been with Vegeta since he became available.
It depends on if you use the ultimate they gave you. Using the ultimate skill the mentor gives you has a chance to activate a Z assist. Basically a spirit form of the mentor appears behind you and makes the attack strong. Female Saiyans have a higher chance of activating the assist but in general it happens a lot. I had four or five in a row once on my male Saiyan.
The other benefit is if you want one of the two Z-souls the mentor can drop when you spar with them at max rank. I'm not sure if the Z-souls they give can be used to make other Z-souls in mixing but maybe.
Besides those two things your mentor doesn't matter. Just go with your favorite of the mentors or the one that benefits you the most.

The problem is that the closer you are to having all seven dragonballs, the less likely you are to get them.
I suspect it simply rolls for which dragon ball you find, and then if you already have that one you're shit out of luck, so getting the first few is basically a gimme, getting that last one can take upward of a goddamn hour.

I actually need to do a little more farming so I can reset my stats, I'm intending to go full on Stamina, Basic, and Strike Super for my swole Human dude
The trick is to pump every attribute into basic strikes
100 ATK, 100 STA, 37 HP with Kaioken x20 is how true ballers Dragonball
x20 is so the best transform in the game. Being able to use your Stamina like a Super Saiyan can use Ki would be so broken if it lasted longer than 20 seconds.
Should I not be being balanced? I like doing Ki as well as fights so I've been alternating between them and then putting an odd point here and there into Stamina or HP
One thing to keep in mind: once your stamina and ki are maxed out from leveling, 25 in each stat correspond to a full bar (without any increases from items)

Namekian is fantastic for Kaioken x20 builds
You just get into melee and vanish until they're out of their own stamina, then go apeshit

Go farm the Ginyu Force PQ for Blue Tornado, Burter drops it, and it is an absolute game changer

It seems like you can make anything work with the right skills
Not having any offensive stats will be a pain during the story and in some PQs
But choosing the right tools and using them right is more important, your character also gains passive stats from leveling up
