Is there any easy way to deal with enemy Dominate spam? Found one fight that just seems impossible because of that. It's a totally optional fight so I'll probably just skip it and never go back, just wondering if there's something I've missed.

Apparently if you can deaggro a boarding fight you just win. I had everyone but Xoti go down and she cast sanctuary which lasted long enough for the pirates to just walk back over to their side and I got a victory screen

Increase willpower/spell resistance (through abilities/items/spells), and if you have a cipher...add that backlash ability (if an enemy tries to mindwoggle you, you fuck up their brain). There are a number of different items and spells which can do this.
There are also a number of defensive spells you can cast that makes it harder.
Paladins also have a number of anti-abilities, and there are some rings that can be used to suppress afflictions.

So basically my tip is to respec Pellagina to have Mental Fortress+Aegis of Loyalty (and Maybe Liberating Exhortation).
Then defeat them easily.

It should drop it to charmed, yes. My biggest problem with Dominate is that almost everything that reduces afflictions only works on friendly targets, so when they switch sides you can't do anything about it.

I remember one combat where I was wondering who the hell Eder was attacking, only to find his circle was red and he was swinging at me, at which point I used one of those rings to quickly snap him the fuck out of it.

Whoops. I meant FULL respec. Like go back and select different starting stuff for your characters. I get why they did it, make choices more meaningful, but it's kinda nutty with games of this size to not allow a do-over. Like just one do-over to allow people to get familiar with the game system and then be look "Oh ok. . .now I get it."
Even though I played PoE 1, this game is so good the second time around that I really am digging into the mechanics (no pun intended) of the game and what they mean and looking at my characters I'm like "This is a fucking mess."

Well ran in to the Black Isle Studios reference(s). Awesome!
Apart from finding the obvious “Black Isles” my crew was attacked by the Black Isle Bastards pirate crew lead by Captain Fyrgist. We defeated them and captured their flag, which is the old Black Isle Studios symbol. Also all their gear was Legendary! (I made over 100k selling it all!)

I now remember what I did not miss about the original PoE: enemies en masse running around the battlefield to surround and pick off every single caster, triggering every Disengage because they didn't care.

There's a warrior stance that gives you a free full attack and knocks them prone if they try. Elder can engage like 7 people at once. Spear training, shield, increased engage talents and there's a spell for +3 engage. I just dash him in and taunt the world
Yeah if you choose to not pick up + engage in your sturdy folks, expect the enemies to flip you the bird and go for the folks in the back that are wriggling their fingers.

Think I saw something about a pet that turns off the engagement-mechanic, which sounds like a debug-tool.
Yeah it also removes the injury system and makes it so your party members always permanently die.

It is actually possible to summon Boo with the command console in BG2. He has a little rat sprite, 1/1 hp, and will knock enemies down when he successfully attacks them!

You can. If anything, the problem is right now respec resets too much.
Obsidian's method of handling respec has been to reset the character to a previously saved level 1 profile, rather than reversing your level-up choices, and keeping your exp value the same. You can test this yourself in Pillars 1 or 2 by using the console to change around the abilities your companion took at level 1, then respec them; they'll be restored to their original level 1 states.
The problem with this model is, however, that anything players have gained through the course of the game other than through the level-up process must be explicitly coded for to add back to the character, in particular the player character. So if the PC gets skill training from NPCs, your saved level 1 profile doesn't have that nor will you acquire that training through the regular level-up process. Which is presumably why those and Watcher abilities are being lost on respec. (Loss of level 1 abilities that got upgraded later seems like a related but different bug.)
In the first conversation with a new companion (before they were even in my party!) Aloth got pissy like 6 times. I guess these two can't ever be in group together or they'll stab each other Minsc/Eder style. Aloth in general has been rubbing me the wrong way time to give this new person a chance.

I'm around 40 hours into the first game, but I haven't played in years and completely forget what's going on.
You'll be fine.
Shit got real and stuff happened and you can select from a variety of world states to suit your taste if you don't have a save to import. What's important is that shit got real again. The intro gets you up to speed right quick.
What consistently pleases me about this iteration is how much better it feels to play in general. Never mind the storytelling, never mind the voice work, the game is a more pleasant experience overall while remaining recognizable as a sequel.
I'm recommend at least youtubing the final Act of PoE1 if you don't want to finish it.

Shit got real. The gods turn out to be assholes. People are assholes. Especially that guy, and special envoy of the God of assholes, that tries to cover up that the gods are fake. Then Protagonist dealt with the biggest mortal assholes, but not the divine one. End of PoE1.
PoE2. Shit got real again. The Gods that weren't quite as big assholes in PoE1 turn out to be pretty massive assholes anyway, except the goddess of the Sea who merely continues to be an asshole, but that's kind of expected from a sea god because all sea gods are assholes regardless of mythology

So am I misunderstanding something about the Wheel? They make it sound like a seriously bad thing to break it, but that doesn’t make sense to me. I know it is what reincarnates people, but life and civilization existed for untold millenia without the Gods or the Wheel. Neither existed until the Engiwthans made them.
So, to me anyway, it would seem pretty obvious that life will continue on the natural way without much fuss.
Super fun time though.
