    you know what's harder than its made out to be is making pancakes and waffles. people be like, that's easymode cooking, and i'm like, no way, it's easy for them to get undercooked or overcooked or turn into a mess, and if you're cooking for other people, there's the fact that you can only make so many at a time and they stop being warm after like a minute, and yeah, you can put an overturned plate ontop of them to keep them warm, but that only helps so much and the steam will make them a little soggy

    My roommate used to heat the oven to like 100F and put the done pancakes in there on a tray. It keeps them warm, they don't get soggy, and they don't keep cooking!

    Also helpful is using multiple pans and doling out pancakes as you go

    Cooking pancakes for friends just feels like the kind of thing where you should be cooking them and dishing them out as they eat

    I think the best breakfast I've had in recent memory was probably when my boss had me and Cass over

    We're all late sleepers on the weekend so it was noonish and the pancakes were great

    Even better was that they cooked 3 pounds of bacon and encouraged us to eat as an Italian grandmother would
