Probably depends on your location. I was at the Gulfport, MS showing last year, and it wasn't even half full. Mostly a bunch of college-age bros, I think. Not an unpleasant experience at all; I actually would have preferred a little more noise what with how excellent of a conference it was. But bigger cities are probably more nuts.
The episodic style will work out really well for FF7, I think. It means we'll get our hands on something much sooner than if they tried to do the whole game at once, and the scale of this is going to wind up being the largest, most ambitious thing S-E has ever done. They've already stated that each of the episodes will be the length of a standard full Final Fantasy game, which means anywhere from 30 to 50 hours for the primary plot.
It's expected that the first episode will focus primarily (or even solely) on Midgar, and S-E has also confirmed that they're expanding the parts of the city you're able to explore. That means we'll finally get to check out Midgar in its full glory, instead of like a dozen screens of slums and two screens of the block corner that is Shin-ra HQ.
The scope of the game is why many people, myself included, assumed they'd never properly remake the game. Going full 3D with the number and variety of environments that FF7 had, in a game that's supposed to be stretching across the whole world through multiple continents, and doing that in a way that feels congruent with a more realistic visual style... it just seemed impossible to do in a single game (which is why modern games have had much more severely limited scope; consider the sizes of the game worlds of FFX and FFXII for comparison). I'm pretty impressed that Square found a way around it; multiple titles seems like an obvious way to solve the problem, but it's a leap of faith I never imagined them taking.

I think my favourite failure was the Konami one from a good many years back now, maybe even 2008, where they had a Ramones cover group play on stage and it was all pretty embarrassing.

That's how I've done it in the past, but I'm seriously considering watching the GB stuff live this year. I just figured I'd have trouble watching it fresh while also having the GB guys talking over bits. But I watched the Xbox Gamescon and Sony Paris Gamesweek presentation via Giant Bomb and it turned out fine.
In all honestly it's just people yelling loudly at franchises they like. For reference, the stuff that got the most cheers a couple E3s ago were Batman: Arkham Knight, GTAV HD and MKX.
So avoid if you hate people cheering enthusiastically. I've personally come to love it, as it can really enhance an experience when timed properly. For example, when they showed a No Man's Sky trailer, everyone burst out in a collective cheer when the ship seamlessly flew into space.
There probably won't be anything this year to make me mark out like above, but I'm just as excited hitting the theater again for the third time.
