You don't really need them. The fight runs in three phases:
1) just try to keep a pillar between yourself and the guardian. Eventually it will do a ramming attack, hit the pillar, and stun itself temporarily.
2) Once it stops doing the attack in 1, hit it in the eye with a regular arrow when it does the spinny laser thing.
3) When it starts doing the megalaser, it's almost dead, so just bum-rush it and whack it until it stops moving.
Easier #2 (I think it was designed this way):
Use the updraft to glide up over to him, drop down from above with a 2-handed weapon to knock him out of it.

As far as I know, it's random. I got lucky and received it on my first scan, while conveniently standing outside a stable (I had no idea Epona was an amiibo reward).

Why did you think you had to fight him?
Well, a couple of reasons:
1. He was a bad guy.
2. Sure the fish guys said he was a tough monster, but don't video game NPCs always say things like that?
3. I thought he was gonna shoot lighting arrows at me, which would hit the ground/trees and then I'd collect them. I didn't understand there would be 20+ arrows just stuck to the trees already.
4. It's never clear to me whether I'm under/over prepared in this game. Occasionally normal looking moblin-dudes 1 shot me. So when Lynel 1 shot me, I thought I might have been under-prepared (had 7 hearts). When he took 75% of my life with the armor buff, I was confused.
5. I thought Nintendo had gone full on Dark Souls with their boss design. I thought this guy was a mini-boss.

I picked stamina for my first two upgrades and hearts since then. Two stamina upgrades allow you to climb most structures if you don't jump (having climbing gear also helps). Swimming remains an issue, so I'm probably going to grab (or swap) more stamina once I'm done a particular side quest.

I'll answer my reason for it. It looked like a boss arena, and I wasn't sure about my ability to evade his sight long enough to get my arrows and go. Plus, I'm "the hero, L___". I've fought this particular beastie in the past.
In retrospect, the cutscene was setting up a stealth challenge, and I could well have evaded the fight. But I chose to engage because I thought I was intended to, at the time.

I'm at three stamina upgrades (prioritized the first two over hearts, been going back and forth since), and I'm finding it's a pretty comfortable place. Climbing everything isn't a given, but I can usually make it work, and I can quick hop on shorter climbs. I can run long enough to get away from bad encounters, with my swim gear I don't really worry about running low and drowning. I wouldn't mind more, but I can generally do what I want at this level.

I've got three stamina upgrades at the moment. I think I'm gonna get one more and then focus exclusively on hearts. As others have said, I found that with three stamina upgrades, you can climb pretty much anything.

Now do it with the Medium and Hard ones. With only 6 hearts, so a single hit one-shots you. Breaking all your best weapons along the way, but getting better ones in return.
Damage stats on weapons make a serious difference. I've been brawling with everyone's favourite tough enemy in the Zora zone, and a high damage weapon combined with abusing anything that lets you get in a lot of hits FAST (two-hander spin attacks, flurries after a perfect dodge, there are other options too..) will just eat through enemies hp in no time.
Headshots etc also go a long way. Neat thing: Weapons are physics enabled when thrown - i managed to throw my club at just the right time to smack an incoming spear out of the air.
Side note: has anyone figured out what adding Salt or Milk to cooking dishes does?
Salt added to meat increases the number of hearts you get back by a lot.
I just tested it and unfortunately I don't think it works like that.
I tested it with Raw Meat, Raw Prime Meat, and Raw Bird Drumstick.
Each of those meats cooked alone makes a meat skewer, with the Prime Meat giving 1 extra heart. Each of those meats with 1 salt makes a Salt-Grilled meat, which gives the same number of hearts as if you just cooked it without the salt.
I don't remember where I fell asleep playing but when I woke up and too it out of sleep mode I was being chased down a mountain by several large bad-ass enemi

I didn't want to finish the dungeons until I had most of the shrines, but maaaaan the upgrade I just got from the Rito dungeon is incredible for exploring. I did the Zora one too and that has saved me a ton of times. I think I might go for the next two dungeons, then try for all the shrines.
Also: Found a dragon over lake hylia, shot it and got a scale. Is that all that I can do with it?

Also, holy shit I just found a cool hidden area in the NE corner of the map
So obviously from the map there is a huge Labyrinth island up there. I glided out there from the Research lab (2 stamina upgrades worth was more than enough).
After solving the labyrinth (found quite a few good items in there hidden too, worth exploring), and finding the access to the Shrine, I leave the shrine and there is a updraft in front of it. I was trying to grab the updraft to get a decent glide start, and ended up falling down the hole... Into a HUGE underground chamber beneath the labyrinth.
The thing is FULL of broken down Guardians (at least you think so. a few come to life.) There is a chest in the center with a Diamond Circlet (helm with Guardian resist up on it), and the damn thing is TRAPPED. like 5 guardians come to life targetting lasers on you as soon as you open the chest. Barely got to the updraft to escape before getting blown up by all of them at once. hahahahaha
Just need those Star Fragment things which I have no clue where you even find.
If you would like to know how:
Keep an eye out at night. Stand on top of a tall tower or something, and watch off in the distance. Sometimes you'll see a shooting star fall, leaving a beacon where it lands. Get there before the beacon disappears!

I actually didn't get caught by that trap! I was wearing the blue shirt that tells you enemy HP, and bars show up when you get close to even mostly broken guardians that refuse to activate. Just have to climb on them and start hacking at the head. I got the chest when I was almost done exploring the room, so only one guardian was left to activate, and I realized what probably would've happened if I'd gotten the chest first!

Finally hit a not fun part of the game. The Korok trials are the worst.
The stealth one is awful. The trial of wood is awful. The other one's really good and well done.
Trial of wood does give you really good gear, including a tripleshot bow. And he implies you can "redo" it after clearing it. Which means you can start it to get more kit and then leave I hope, because all the equipment is great and it's FREE.
I got to 13 hearts finally. Cleared my second divine beast and yes this will make exploring SO much easier. Shame it only seems to recharge all at once instead charge by charge, but...

I just discovered that when you're taking a selfie with the camera LT does a different action pose depending on your L-stick pose.
If you tilt L-stick right and hold LT Link draws his bow, and left on the stick and LT he draws his melee weapon.
Useful if you want nice shots for the compendium!
