A dude at work is really excited about this and is pushing me to start with Birth By Sleep, but I feel like I'd rather start with 1 and then play Birth By Sleep. What order should I do this in?

Prequels are informed by your knowledge of what comes after them and BBS is no different, anyone that recommends chronological order to newcomers for any property is crazypants

Chain of memories is the one with card based combat right? If anything that would be the game that I might end up just watching a playthrough or reading a synopsis.
I didn't like how Dream Drop Distance handled, I feel like I got everything I needed out of it watching the Youtube video of all the cutscenes
pretty much all the spinoffs, even Birth By Sleep included, have no relevant plot until the end of the game, where they dump ALL OF THE PLOT on you at once, and the rest of it is just retreading Disney worlds you've been to in previous games and a handful of new ones

I bought 2.8 and was about to play DDD but I dunno...something feels weird about it.
I've been fighting buying a PS4 but I think it's finally happening this summer, I want to play through these with my fiancee who keeps saying she's interested in these.
a lot of the spinoffs have about 2 hours worth of plot and are 15-20 hours long anyway
Birth By Sleep is the only one I recommend actually playing
That and DDD
I think COM is better with the re:make but yeah it's plot thin (until now maybe??? Remember who's in that trailer)
I like a lot of the plot of COM, but I find it absolutely impossible to play even on Easy. I just can't fuckin' do it.
BBS and DDD are really fun, though.
I was gonna play/replay all of KH since I had only played KH and KH2, and burned out as soon as I hit CoM. I wanted to play it to get some context for the stuff in KH2 that always confused me, but nooooope.
Lost in the character and world stuff is that kh3 will have a dmc style system where you can switch to one of three equipped keyblade on the fly with unique movesets

Simple & Clean
Making the keyblades have different movesets is a really good idea. There was never a reason to use a lot of them in KH1 since they were just straight upgrades, and 2 still had some that were outright better than the rest like Oathkeeper.
