Its not a good idea to do that...you can end up corrupting your game data and not realize it until years later in the fortress, when it's too late to do anything about it.

I tend to take 3 miner dwarves, extra seeds, and fuck skills (removing one axe).
Reason being is every single game, I hit the river, and it floods, and miners die. I only restart if I lose 2/3 though.
And I FINALLY got a working farm down. I'm sure something horrible will happen (beyond the catastrophic cave-in in my new dual mason/crafter/mechanic warehouse [which is also why I ask if it's diagonal, unless how I'm thinking the room should be stable in 6x6 simply is wrong]) but for now, we have plants.
Good to know that cooking plumps will destroy the seeds. I just have to figure out how to set plumps as "brew only".
Dear god I hope the new food storage and kitchen/still warehouse doesn't suffer the same fate....shit....

2. Do you actually have any stone? Digging out new areas will often yield more than enough. Check your storeroom and see if you have any (Dwarves are smart enough to locate the stone they need wherever it is).

Press Z to go to the status screen, then press right to select Kitchen, and press Enter. Scroll down to Plump Helmets, and if its cook status is Blue (will cook), then select Plump Helmet and press C to toggle its cook status to Red (won't cook).
My fortess is running rather nicely, I just dug straight back to the river and set up farms that get flooded with the seasonal floods, at 35 dwarves and counting (2nd winter in progress). Ive got 600 food and am pumping out all kinds of stuff.
Strange thing though, I appear to be on a map with pretty much no baddies, theres nothing outside as far as hostiles go and ive had exactly ONE snakeman come out of the river, which was quickly dispached by my mason (who died from his festering leg wound later). Anyone know why this is? seems like it would be good to know my settings so I can pass it on to other newbs such as myself?

You're probably in a swamp or wetland. They're bugged/incomplete and have no natural wildlife yet.

As far as graphics/interface goes, I'm slowly adding in tile support
as I can (you can use custom creatures right now), and I also hope to
add in mouse support beyond the mouse's current limited use on the
designation menu. It's difficult to get too far into either of these
things at the current stage, because basic parts of the game are still
in development. For instance, the z-axis overhaul just gutted several
features, and any graphics/interface work there would have been
wasted. As things stabilize, I'll be able to add gloss to them. In
that way, you can consider the current mode a story-board for
something else. I like the text-based mode myself, but I know a lot
of people would like a more modern display, and a lot of people refuse
to play until they get it. It's likely to be a slow process though,
and I doubt I'll ever touch 3D or anything too fancy (fancy as in 15
years old...)

Ovals are stones, * are either gems or ore (neither of which can be used by the Mason). Hrm...is your stone accessible? Give us a screenshot of the area, if you would.
So, is there a point where your dwarves completely ignore the 400 something plump helmets you have stored and just fucking decide to starve to death for shits and giggles?
the only doors I lock are the ones to my farms during the winter. Heres my fort, which Im just going to quit because I don't want to watch my dwarves chase vermine for food.

Don't use K, use V.
EDIT: Some menus can only be navigated by using the hotkey commands. Once you press V you need to press P and then L.
I had 3 metal smiths, one was taken by a fey mood and stared at my wood pile outside until he eventually went beserk and tried to attack a kitten. he was (suprisingly) quickly dispatched by 2 war dogs in a chunky fashion. the dogs remained unharmed.
Now another metalsmith has gone fey and right in my dining room. If i can't smelt something he needs in time his bezerk might not end so well.
So now I only have 1 active metalsmith who is not mentally retarded in my fortress.
I am going to have to station a guard next to him in case he does snap I think. Come on migrants, daddy needs some fodder.
Somebody had a brilliant plan for that: lock them in their room, which just happens to be linked to the river. Open the floodgate and no more problems.
If it's red, then there are no seeds usable. They have to be taken to the food stockpile first.
But.. they are in the stockpile.

I just had a cave in destroy my carpenter shop, my mason shop, it killed my mason, knocked two others unconcious and killed a mule and 2 horses.
Then no more than 4 seconds later a massive herd of mandrills totally wiped out my caravans.
