    What is real ale?

    Beer that is still live at the time it is served, which has undergone a secondary fermentation in the cask to create its carbonation, and is served by hand pumped vacuum pressure instead of by gas pressure.

    As opposed to keg beer, which is usually pasteurised and is force carbonated at the point of sale, like a soda fountain.
