    in reality they are only:

    texas: dry rub
    kansas city: sweet sauce
    st louis: tomato sauce
    carolina: vinegar

    Where would a tomato sauce with vinegar fall under? Those are the ribs I make and they're my favorite. Followed by the lemon/oniony sauce that I make.

    those are called piedmont bbq and are kind of an offshoot of carolina

    there’s a texas style bbq place near me that’s absolutely horrible and they’re always out of everything. This is BBQ, the most natural high volume cooking style, and you are a low volume restauraunt. how is your kitchen not perpetually overflowing?!

    But also I don’t care for brisket or burnt ends and I don’t particularly like texas bbq, so having this place be bad is like watching that contestant you didn’t like on double dare get slimed so it’s ok.

    why isn't NYC BBQ on this list everyone knows NYC has the best everything

    BBQ and Mexican food are blind spots for New York City, it is known.

    Though there are some pretty decent BBQ places in the city, they are versions of Carolina BBQ or Texas BBQ, not their own thing.

    If you want fire cooked meat in NYC you are better off with Korean BBQ. That Korean BBQ was not even a choice is appalling.

    I propose “cookout” if you’re using a grill to prepare hotdogs and hamburgers, “grilling” is the cooking activity you are doing at such an event.

    If you’re throwing bbq sauce on grilled chicken parts, I insist that you call this “barbecue style chicken” like a PR person working off a style guide to avoid an FDA fine.
