    You set a kitchen timer to about 90 seconds and then you lift the iron after that to see if they are done enough.

    You are allowed to check on your waffles to see if they are done enough!

    secondary hot take, grade B maple syrup is vastly superior in flavor and texture to grade A.

    If it's just plain (with syrup), I like waffles. I love maple syrup.
    But I also like going to IHOP and getting their stupid pancakes with the layers of chocolate or caramel or cinnamon frosting or whatever nonsense because I hate myself.
    At the diner, I usually get silver dollar pancakes, because you get more and they are easier to share with the kids. I'll still sneak in some waffles when I can, but the kids make such a mess with them.

    Also, I’ve found that you can replace the oil or butter ingredient in pancakes with an equal amount of yogurt. Adds a little tang to the thing, too.

    Pancakes
    Hot sauce on pancakes is a real thing. I suggest everyone try some pancakes with non-sweet toppings.

    Some good combos:

    Chilli and sour cream.
    Garlic, onion and sour cream.
    Cheese and ham/bacon.

    My absolute favourite is cheese and bacon. The sweetness of the pancake, the saltyness of the bacon, the dairy of the cheese. 👌

    I like the other two, however, when I made them I didn't get the amount of topping right and the chilli/sourcream and garlic/onion/sourcream flavours overpowered the pancake. Ideally you want to strike a balance between the sweetness of the pancake and the savoury flavours of your topping.

    Most recipes for pancakes that I've seen don't tend to be heavy on the sugar or other sweet ingredients, I'd bet they'd work pretty well as the base for a savory breakfast. Top them with sausage gravy and scrambled eggs

    I made 'em with a more pikelet type recipe. Basically small, thick pancakes the size of a large cookie.
