A couple really valuable resources for builds and guides:
poebuilds is a repository of builds posted to the official forums, but organized so you can search for specific playstyles and/or skills and/or classes. It's not specifically based on starter builds, but here you can see a big list of stuff that's usable and it tells you how popular they are. PoE has a massive stream/youtube presence, and lots of them make starter builds every league, often with video guides that explain everything in detail and sometimes with a text file you can put into Path of Building that will give you all the build info for you to refer to easily and even experiment with. I'm not looking to get super deep into endgame builds, but maybe a general build guide would be helpful? I'm playing a Marauder and have mostly specced towards stuff that increases strength/2-handed weapons and such.
If you wanna be a big big two-hander boy, there's one iconic build I'd suggest: The EQ (Earthquake) Jugg (Juggernaut), aka the THICC JUGG. Tons of HP, tons of damage, you use a big two-handed axe or mace to smash the ground and blow up everything in front of you, and leave aftershocks behind you in a trail of damage. It's a classic. Making your own stab at a character using nonsense skills and running into a wall is a rite of passage. So I recommend that. Hell some of us still attempt that after thousands of hours. After that yes follow a guide. The game has a lot of moving parts and following someone's instructions to the letter without a natural understanding of some basic mechanics (like sockets and flasks) will likely result in you getting caught in them.
Skills play very differently. Someone might recommend Cyclone, you might find you hate it. Try an Arc build instead. Or a summoner (don't let the wailing and gnashing of Reddit fool you they're still busted strong). You might not like that! There's Essence Drain and Caustic Arrow which are very similar on paper but play totally differently. There are traps you throw! Totems you place! The list goes on and on. And that's without getting into weird stuff like triggered skills.
The point is, try something until you like the way it feels to play. If you really dislike, for a completely random example that has no relevance right now, Blade Vortex you're not going to have fun with that character no matter how outrageously broken it might be.
They say the real game starts after you beat the story mode, I think acts 1-10 are fun enough on their own. It's just that the repeatable experience that keeps you coming back is all in that post-story mode.

So I've been using some of the items (like the thing that upgrades a Common item to Rare), is this a good idea?
Also, should I save uniques or just dump them if they don't work for me - all I've found is wands and such so far.
Sell the uniques off unless you know they're something you'll use. If you find Lifesprig that's a solid starter wand, and Shade of Solaris sells for a decent amount of chaos orbs, but yeah. Sell em.
You can use minor crafting things during the story mode, I wouldn't use too many alchemy orbs (a few is probably okay), I think essences are a much better way to get gear you need since it allows you to target certain stats when rolling.

My Soulwrest character is best described as "never stop running". Convocation, Offering, Deathmark as needed.
60/40 block and never staying in the same place is her defensive kit. A swarm of 20 ghosts and 8 skeletons does all the work
Did I make the right decision killing those bandits? The reward of two passive skill points seemed nice
In most cases, that is the best choice. There may be some builds that actually want one of the three other buffs but taking the passive tree points is never really a bad option.

If you look at the numbers they were able to hit, it had to happen - its the strongest build ive seen in this game in a really really long time

Do I need to do anything to capture monsters for the menagerie? So far it appears to be random, dude shows up and helps me capture monsters and then disappears. When I played that league so long ago, I seem to remember you had a pokebal equivalent or whatever.
Also, I have “The Apex” and “Maligaro’s Spike” in my inventory and I can’t seem to get rid of them. I'm guessing this is a quest thing? Do I have to just keep going till I can use them on something?

No more nets needed, Einhar just needs you to take their HP away so he can capture them. Aye, the quest objects are stuck there until you reach the places where you need them.
Yeah I've been using it (Storm Brand + Archmage + Controlled Destruction) on a spare 3-link on my Divine Ire character, it's nutty even just by itself

Hello frens I started playing this too. I had about 2 weeks at the end of Metamorph league and then I started a trickster for Delirium (my current build is here. I found some Caustic Arrow/Toxic Rain build and it kills things quick but the defenses are not great (starting T10-T11 maps and if I'm not perfect I just explode). I am just south of 4k health and don't really have anywhere to go in the tree for further tankiness so I am going to respec to this Essence Drain build

I did that in one league for a tectonic slam build and it took so long to get an Oni, never again.

It was just a zero-thought-required filler activity to keep my ADHD in check so I could watch some of my TV backlog undistracted.

Am I... handicapping myself by focusing entirely on red skill gems?
Eventually, yes you would be limiting yourself. At Act 3 it's not going to really matter as long as you're supporting your main skill with 2 or 3 damage supports. Just make sure you're not doing something like supporting Molten Strike with Brutality.
You can (and should) be looking at other gems too, most stat requirements are pretty negligible for low levels. Even then, if you find yourself needing a certain stat, there's a bunch of +30 to one stat nodes all around the passive tree.

Yeah so even a partially incomplete ED Contagion build torches map content. I need to find the 3 socket same color recipe in Delve to get the last gems in place but even without that this is incredible, and CA was damn good on its own.

Each Storm Brand costs almost 8k mana to cast, and they do just shy of 13 million dps each.
Archmage storm brand is the coolest!
