A cool book about food! This will go nicely with my new pan, and it’s good because I’m kind of terrible about cookbooks (I make 1 or 2 recipes and then forget about them) but this looks like a book about the theory and science of cooking, which I can then apply to ALL cooking!

The Joe Beef guys are some of the top chefs in Montreal, and I've heard great things about it both as a sort of cultural document of the whole Quebecois vibe and as an insane collection of project foods; I believe they even take a small section for aboriginal foods of the area, too, if the reviews I read were not mistaken
