I am willing to try going to a sugar shack when it is no longer COVID times
Can anyone recommend a sugar shack, should SilverWind and I choose to make this pilgrimage
Most of my syrup sources are people who tap it on their farm and pass it along to their friend network in like, recycled Nestea bottles, so I don't have a direct shack reference
But definitely look as early as late Fall/early Winter if you want the true Sugar Shack experience with a professional several course set of French-Canadian meals, they sell out super fast at the good ones (which usually take place late Feb/March)
One of my past coworkers diets for the full winter to prepare for their visit to one, like some kind of reverse hibernation
I've made these a bunch and they're excellent. I don't keep buttermilk around, so I substitute a 2:1 mixture of plain greek yogurt and water for the same volume of buttermilk.

Ooooh, oats! In my pancakes! That sounds good, thanks!

Edit: I made a commitment to make that joke without googling to see if coffee waffles are a thing. Of fucking course coffee waffles are a thing.
