    I like blueberry for sweet honey and buckwheat for the "I feel like being kicked in the mouth and sinuses" honey

    Actually that may be an indicator for the entire state of things re: my palette

    But I will still take molasses over maple syrup as a sweetener and as a topping. You can't beat good old molasses cookies

    I didn't know it was a thign until I started buying honey from local producers around when I first moved to Toronto

    My first reaction was "how the hell different could this be" and then I splurged on a 12 dollar jar of wildflower and 12 dollar jar of buckwheat, just because their colours were so different, and the gulf between those two is so vast they're almost not the same substance

    Oh you can definitely tell different honeys apart way easier than, like, different years or regions of maple syrup.

    Blueberry honey is even blue! Like honey is just digested nectar and pollen in bee saliva. Different plants taste different.

    Oh, man. If you ever have the chance to try Australian ironbark honey, jump on it. It tastes like it was made in a hive that only hires ex-con bees who are trying to put their violent pasts behind them.

    If you're in the US, orange blossom or mesquite honey might be easier to track down. They're pretty widely available, and they're a good way to see what kind of flavors you can get aside from clover honey plus probably we put some corn syrup in there, supes sorry.

    Because mead the way I like it is usually pretty dry and delicate to use in mixing.

    Once had an orange blossom mead with cinnamon. It was sweet but warm like a cinnamon altoid but also kinda tasted of orange zest.

    Plus it had what was obviously scorpion from mk on the label and it was called "toasty"

    we had a maple-caramel sauce for our desserts at work last year, and it was the absolute apex of things to put in your coffee

    I probably did damage to my body drinking more coffee than I should have just to put that stuff in it

    My syrup opinions are pretty much directly related to how bitter they are, turns out
    current ranking, best to worst

    Treacle
    Molasses
    Pooh's Goo Honey (this is a real locally produced honey back home which tastes a lot like molasses which is why I like it)
    Golden Syrup
    Raw whipped honey
    Raw sugar
    Soft dark sugar
    Other artisanal honey that isn't random store shit
    real maple syrup I GUESS maybe
    ....
    ....
    that stuff american diners give you with pancakes that sometimes claims to be maple syrup but isn't
