I was delighted to learn tonight that the trick where you vigorously shake garlic between two bowls to peel it really does work, and a very simple garlic/butter sauce is really delicious. Good night of food discovery!

Food thread I went to a dodgy warehouse in an industrial area last night and had dinner paired with some beers. There was.
A pulled oyster blade wagyu taco that could have been a small burrito.
A full slice wagyu brisket in a taco.
A pair of chicken tenders fried in tallow and served with a tallowaise sauce.
A 350 gram nine score wagyu scotch fillet.
Key lime pie.
Annoyingly I bought the food and immediately contracted food poisoning, so by the time the chicken came around I was pretty full and by the time the steak was ready I had like two pieces and was completely done.
Food poisoning is my go to excuse for when I don't feel like going to work
Also, my lifelong obsession with poor food safety etiquette makes me think I built up a tolerance to botulism, or whatever, cause I've never had food poisoning, despite my repeated and effortless attempts

I ate gas station sushi at least once a week for three years straight and never had a bad experience.
I mean, it seemed like a pretty serious business sushi setup and the guy who made the sushi also owned the gas station, but still. Food poisoning is probably a myth.

Ok thread. I have now a full pork loin roast. It is fully intact now and it has a nice fat cap on it. Ideas for a week worth of meal prep? Looking for healthy options, no major dietary concerns just not something SUPER bad. Was wanting to maybe make a brown rice dish of some sort and check out what veg is on sale near me.

Had leftover Lentils and Chestnuts soup from the FF14 cookbook so I made some garlic bread to have both for lunch today.
The soup is great, do recommend the cookbook. But the bread was super good for the amount of effort, I'm proud of the result.
Put Olive Oil, Garlic Paste, a little English Mustard, and a small squirt of Honey in a bowl and mixed everything into a good paste consistancy. Spread over both sides of slices off a sourdough loaf and toasted them under an oven broiler until dark brown around the edges. Very good.
I have thrown butter, red peppers, red onion, cherry tomatoes, garlic, and actual tomatoes + a whole bunch of smoked paprika and garlic salt into my Foodie to roast for a bit.
Then i'm gonna add mushrooms, some canned tomatoes and water, and leave the whole mess to slow cook overnight, and puree it at the other end for a hopefully very tasty tomato-based soup.
So dinner last night was smoked porkloin. Super delicious and so cheap. I've cracked the code for making it absurdly juicy; leave it in the fridge until the very last second. My probe thermomoter said the internal was 33f when it went in a cold smoker.
The result: a porkloin that leaks juice over the cutting board even after resting for 15-20 minutes. It's so good.
And then tonight was using a rosemary simple syrup I made yesterday to to make a couple delicious cocktails. Did a wonderful Bourbon riff on a Tom Collins (equal parts rosemary syrup, lemon juice, and bourbon. added a touch of good maple syrup) Closing out the evening with an actual Tom Collins. Gonna have to make sure I keep rosemary simple syrup on hand for mixing from now on. I also wager a touch would make a fine addition in a herby vinaigrette.
I made some 'sausage' patties out of lentils, oats, and flax seed and they taste pretty good. most of the flavoring of sausage can be recreated with just the spices in it
I am wondering about recipes for dinner for the coming week. Something "healthy" or something that isn't horrible. Something that can make use of avocado, tomatillo, lime, cilantro, a protein (pork chops I have frozen maybe?). But then also utilize the yeast that I got a little bit ago (got a pound bag of yeast for baking along with some bannetons, a bread lame, and a pullman loaf pan).
I am drawing a bit of a blank tonight, so I may think on it for the night and get back to it. Recommendations welcome.

More interesting. My first batch was OK, definitely flavorful but I dunno if it's as Nashville-y as I wanted. I think I'm gonna do a Buffalo style chicken meal prep next.
A Filipino style adobo is a good way to make chicken more interesting and all you really need is soy sauce and vinegar and a bunch of garlic and you probably already have those things. I don't have an authentic recipe to hand but I've used this one and it still comes out pretty good!
