The greatest collaborative writing project ever written was the truly bizarre fantasy world fan wiki that was almost entirely well cited stories noble's personal sexual dalliances with one another and the resulting children, which frequently did not bear either parent's name or appearance.
The fantasy nobles were all real life porn stars and the citations were all links to videos. The family tree was crafted to make them related to each other via some bizarre alchemy based on what companies they were known to work for.
i only ever wrote a couple of scp posts but one of them got turned into a recurring bit that they still mention from time to time and it makes me happy to think about
I occasionally remember that I am technically a Published Author whose work was viewed by over a million people.
SCP has got to be the most consistently high-quality, high-volume collaborative writing project in the history of the world.
This feels like a pretty small category, like getting into the Guinness book of records for heading eggs into a bucket. Also I dunno if even big fans of SCP are going to say it's consistently high quality. The most common judgement among fans seems to be there are some diamonds among a reasonable amount of rough.
Also, thinking about it, this category also includes basically all long running TV shows, which, yeah, SCP for sure isn't going to the top of the heap against, I dunno, TNG or a billion other shows.

hmm yeah I hadn't really thought of TV as a collaborative writing project because it's not individual contributions to a shared world, with an overarching editorial board to guide and filter. But perhaps it is? idk, interesting. Interesting.

I can't think of many book series with a high volume and lots of authors that aren't TV shows first, and they're all mostly filed under "tie-in fiction", like the Star Wars EU, or the Star Trek books in all their incarnations. Doctor Who has a whole lot of published books, a reasonable number by pretty good writers (Michael Moorcock, Jenny Colgan, etc). RPGs sometimes have a line of fiction, I guess. The Dragonlance books, D&D books.
Thinking about it, the most obvious example is comics. High volume, shared universe, lots of writers (and artists). Quality is variable, but that's true of everything on such a scale, including SCP.

Oh man, this is the coolest thing. I'm doing neural style transfer (brief lay description: making my computer paint a picture in the style of another picture). I picked "the Wave" by Hokusai, which is actually a pretty shit photo to try this with, but it's what one of the tutorials had and I'm lazy and just trying to get it to work. I ran a few test-steps (it takes many steps to actually paint the photo) and here is the difference:

The cat is unchanged, but that's irrelevant. The really cool part is the floor - the algorithm looks at the tiling and starts to hallucinate wavey shapes in it! That's so neat!
