    A large truck comes and empties the garbage dumpsters for our condo building (and surrounding ones I think).
    Its schedule is ineffable. Sometimes it is at sensible times. Often it is at near-midnight. When it arrives at that time, it wakes the small child, who is upset by the loud noises of the truck lifting and dumping a dumpster-load of garbage outside his window.
    Yesterday, for whatever reason, he just would not settle back down.

    Ok, everyone drop their tofu recipes. Mrs Moon is getting gastric sleeve surgery in a month and needs to do a little better with protein intake for pre-post surgery and the surgeon suggested tofu since she's not huge into eating meat and was forcing herself to eat yogurt/cottage cheese.

    Also, depending on your access to an Asian/International grocery store, look into silken tofu. You can sneak that stuff into almost any creamy sauce or dip (or pudding maybe, I've never tried) and barely notice, I've made a really pretty decent dairy free tzatziki with it and it's really versatile in ways you don't think of tofu as being. Yes, you do have to have strong flavors to ride over the general tofu-ness of it but it's worth experimenting with.

    Funny enough, I happen to know that Watanabe Rika of Keyakizaka46/Sakurazaka46 used to mix silken tofu into chocolate pudding

    We've never used a press. Normally I just toss it on a cutting board over a couple of paper towels, then throw a couple on top and press it firmly for a moment or two, then swap out the top paper towel until it starts coming off only mildly damp. Then I cut it in half like a book, and then lay those two pieces back on top of themselves, and cut it 8 times in both directions (we like having the tiny bite size pieces, plus I like it when they have a little more ?bite? to them? I'm not sure what the right descriptor here is). Then I heat a couple tablespoons of sesame oil in a skillet, and cook it for a bit, trying to get all the sides really well browned. Usually medium high heat, and I'll leave the first side to sit for ~5 minutes (on a gas stove), and you can see the crust starting to form. Once I've gotten both sides about the same level of crunchy, I'll pour in some soy sauce (tamari for gf) and let them absorb that and it sort of hardens up on the outside under heat. Then I take them out and sort of saute/stir fry w/e veggies I'm going to use, usually either broccoli (its easy to get frozen chopped broccoli), or onions, and bell peppers, (and broccoli if I feel like putting the work in. Sesame oil and at least a couple of cloves of garlic oil. Once they've cooked a bit, I'll add a fair amount of ginger powder and a little chili powder, then once those are stirred in well hit it with some more soy/tamari sauce, and then dump the tofu back in. Serve it over rice, pour on a little teriyaki sauce (I got this really good gf Szechuan sauce thats really tasty, but too spicy for my wife).

    For curry, I'll cut the tofu the same, but then parboil some white sweet potatoes, then saute some onions and bell peppers, once those are browned add in a tablespoon of curry powder (I use mccormick's yellow curry powder), and a decent sprinkle of paprika to let them get just a bit of the heat, then dump in a can of coconut milk. Once its all stirred together fairly well, add the tofu and sweet potatoes and serve (I like to add garlic sriracha paste to this, but again, too spicy for the wife, so its up to you).

    Is this the kids thread or the cooking thread? Where am I?

    So my 2 year old has been pushing stall tactics every single night for a good couple of months now. I've started to wise up to them and when she says she has to go potty well after lights out, I remind her she just went 30 minutes ago but if she really has to go then I will take her but I'll be disappointed if she's actually just stalling. I plop her on the toilet and set a 2 minute timer on my phone and approximately 1:50 into the timer I hear the barest trickle of pee. Ok good job, you got a couple extra minutes out of bed, now lets wash up and go back.

    "No" she says, "I have to poop."

    I'm 99% sure this is a lie but I also don't want to not give her the opportunity if she actually does have to go. I said "Okay but I'm going to set another timer, and we aren't going to talk, you're just going to poop." About a minute into this second timer, she looks up at me and says "I'm sorry."

    "For what, sweetie?" I respond.

    "I'm stalling." At this point it takes every bit of willpower to keep a straight face and not start laughing out loud. We put her diaper and PJs back on and I try to have a heart to heart about telling the truth and how Mommy and Daddy need to know you're telling the truth to keep you safe, etc. but of course she's 2 so it goes in one ear and out another as she starts talking about hearing the freight train outside.

    I'm happy to hear your kid says they want to poop because they don't want to go to bed. Ripley does that and of course we go along with it every time because you can't ever say no, right? Cause that's when they're gonna shit their pants.

    Time has come to wean my son off Peppa pig.

    He got in to it big time whilst we we're sick. Didn't mind at first because he'd still play whilst it was on.

    Now he'll just sit there zoned out, ignoring us and no playing or speaking.

    Full meltdown before nursery because I turned it off.

    As soon as he wakes he asks about watching it.

    I'm happy for him to have screen time but this has become a bit too much.

    Wish me luck :P

    The Mrs is out tonight with a local mums group, her first time out since our lad was born, nearly a year ago. Also probably my first time home alone with the boy for longer than an hour. Everyone involved is Quite Anxious.

    ETA: for the avoidance of doubt, having moved countries in a pandemic, this is the first time either of us has been out in the evening at all! We are very excited!

    However, small person is currently refusing to sleep and throwing himself around the crib, so I may be less excited, overall.

    Ellie's doing mostly ok with the lockdown.

    We have had a few extrovert meltdowns though. It's very hard for her, being used to do much stimulation and friends at school to get thrown back into being just in the house with me and Ecco and both of us working.

    It's a balance that we're struggling with. Because she's mostly ok to be on her own playing and watching videos etc, but she really does need human interaction as well. And ecco and I are both pretty much introverted so it's a challenge.


    We're getting through, though. Getting through.

    I got an odd email from our daycare that talks about COVID protocols. The first thing was that they're requiring a weekly COVID test for any staff member that hasn't gotten the vaccine yet. The second thing is they've been providing $100 bonus for staff that are fully vaccinated.

    Um...WTF?! The daycare has been super tight on testing and temperature checks since the pandemic started. And you mean to tell me that some of the staff aren't vaccinated? Like, I can't say 100% for sure that email didn't come directly from our center, but still...if it had to be sent, that means some of the staff somewhere aren't vaccinated.

    This stupidity and fear mongering makes my fucking head hurt.

    I mean, I'm not surprised. Now that the Pfizer vaccine has full FDA approval certain places can be assured that requiring it should be able to clear legal hurdles, but up to this point it was harder to insist that people had to be vaccinated to work in X place, even if that was a school or a daycare. And I'm sure that even if more places start requiring it there's still going to be push back for a bit, because . . . some people are just way more scared of the monster in their heads than the disease that exists in real life.

    As a follow up to my above, tiny human has been asleep for 90 minutes, and I have spent that time reading in total silence.
    I am not sure I've had that much time without a noise since he was born, and you know what, it's really helped.

    I'm.. not a big Bluey fan. My kids like it, but my kids act like goblins trying to get me to act like the parents in the show. It's exhausting.

    Me and my wife have been having a discussion about our second.

    We've decided we're probably gonna wait another year or two.

    Financially we'd struggle with a second. I'm looking to change jobs which would be a big pay cut initially and if we were to have another next year I'd not be able to do that.

    Also means that by the time the second comes round we'll be getting free hours at nursery for my son and he'll soon be at school and have no nursery fees at all.

    Also gives my wife a bit longer in her promoted role.

    At least with needing IVF we can plan in advance (provided it actually works).

    I'm not particularly worried about a 4/5 year age gap between the two.

    It sucks that we can't just have children when we want but we want to make sure we're financially stable.

    We're starting school tomorrow and the kids are going back in person and we're really hoping for the best. Vaccine numbers in our area are very good and the kids have been practicing in their masks and I think they'll be ok, but man this whole thing suuuuuuuuuuuuucks.

    My daughter didn't want to bother us this morning, but also didn't know where the wet food was. So she tried to make some.

    Found out that prior to daycare shutting down for COVID, another three year old girl told my daughter she didn't look nice with long hair and now my daughter wants to get a haircut.
