Was very surprised. Still wouldn't consider getting it, because I don't like the idea of buying a game that will definitely simply be revoked someday as the servers shut down, but very surprising performance on my lowest quality internet. Not sure if it would hold up during action scenes but it felt completely fine.

The recently released Part Time UFO has a coop mode, and has a pretty gentle learning curve. Kirby Star Allies and Marvel Ultimate Alliance 3 might be worth a look too.
For anyone wondering, No More Heroes 1 and 2 on Switch are the definitive editions of these classic Wii games. Native ports, 60 FPS, high resolution, fully uncensored and with both motion control and pro controller support.
It almost feels like a shame when a good quality game is announced and released on the same day. Won't get the hype it might otherwise have, when it sounds like the quality of the port deserves it. Y'know, do a trailer a week before release and say all of these things, 60 FPS, definitive, etc. etc.

Death Squared. It's got very simple controls and is currently $3. You have to slide 2 color coded robots across a grid without dying. Maybe it gets to complicated for a 7 year old, but it's a great game. It's what I play with my 77 year old father because reaction time is never an issue.
Chariot: It's a (mostly) slow platformer where you have to push and pull your king's coffin chariot to his final resting place (while his ghost snarks at you). It can be played solo, so I imagine a second player can be mostly dead weight without affecting much. Currently $1.50

As previously said, Mario Kart with steering and acceleration assist are very helpful for kids.
My background: two kids, 5 & 7. Here's what they enjoy.
The youngest loves the new Kirby. It's easy as far as platformers go but it has a lot of content and 4-player co-op.
Both kids, and their 6 year old friend, play Towerfall every time they're together. I'm talking 3+ hours of frantic happy screaming at shooting each other in the face with an arrow.
Hyrule Warriors will likely require you to carry your nephew through the game, but it will allow him to button-mash and still defeat hordes of bokoblins.

Heave Ho needs a mention. It can seem a little hard to grasp wary but spectacular failures are the best part of the game. Played that with my 7 and 9 y olds and it was extremely loud laughing for hours. Some maps took us like 20 mins even when it gives you help after 10, and at no point did anyone care. This is especially significant because my kids find something to fight about at the drop of a hat but were ok with everything going on here.
I think the nsmbu games are good too. Easy to let the kid lead and you play the bodyguard role.
Pikmin 3 Deluxe has a 2 player co-op mode, dunno how it plays.
But there's a demo, so you can try it and see if he likes it? (dunno if the two player stuff is included in the demo though)

The game is bananas, and my daughter and I played the shit out of it. I wish there were some co-op specific objectives, but it's still fun as hell.

If the kid were a little older I would say give Broforce a shot (difficulty being the issue more than pixilated violence).
