    This thread is making me want to up my chilli game. I make chilli pretty regularly and it's painfully mediocre. Doesn't help that I've never eaten authentic chilli so I have no way of knowing what I'm aiming for.

    Aim for what you want to eat. It's such a joy when you find a new wrinkle to add to future pots. Finding ways to reduce the acidity (turns out it was tomatoes in my case), learning how much chili powder is too much, which veggies work great, different meats, etc.

    I did my own beanless version (added drained hominy and mushrooms in the last hour) of this with a stout. I also let it simmer for hours and tweaked the cumin and chili powder content as I went. Thinking next time I'll heat it up with some Sambal Oelek to get a bit of vinegar in there.

    Somehow I made it this long after making a thread about chili before making a batch myself.

    For the record I used finely diced beef and pinto beans.

    I topped it with sour cream, avocado, a 4-cheese blend, and cilantro.

    I'm making green chili tomorrow! Is that chili? I'm using the JKLA recipe, but I'm adding black beans and sweet corn, and subbing in hatch green chilies for the poblanos called for in the recipe.

    And then I'm going to take that shit and slop it over some nice crispy tater tots, instead of putting it on rice or in a tortilla.

    Dear not so secret chili thread, I was going over the chili recipe I've been using (the one from the D&D cookbook) and its good, but I was thinking maybe I want to do like slow cooker chili? Set it up Saturday night for Sunday eatin? Does anyone have a good like, low and slow chili they like?

    Also what peppers do people add to give kick?

    That was onion. You have a choice of toppings to choose from, and yeah at first it looks like too much but once I stirred it in it was really good.
