Well, as he said,
they fought Thanos together and saved the universe via their shared sacrifices, one of which killed Peter's mentor-father-figure. I could see Strange feeling some similar mentorly/companion type of feelings and wanting to help Peter.
I agree that Strange is about as arrogant as Stark, but even then, Strange had a rather pragmatic view and wouldn’t normally risk literal reality for just one kid. He even says as much in Infinity War.
My guess is it’s in part because Strange feels some guilt/responsibility for Parker because of how he save-scummed defeating Thanos and knew that Tony would die as a consequence. I cannot think of anything else aside from Strange doing it just for the shits and giggles.

There's also the fact that Strange thinks that doing it isn't hard, and wouldn't be hard, until Peter screws it all up. Like, clearly it's something that both he and Wong know about off the top of their heads, possible how they cover up magical disturbances to keep them under wraps. Wong just doesn't agree it should be used on Peter since it's outside their wheelhouse.
I love how big of a reset button No Way Home could be, potentially. Just letting them pick and choose from things that were and weren’t MCU canon and drop them in or out as they like once the multiverse of madness gets resolved.

It's possible he needed Peter for whatever *hands wave* reason.
Is the end going to be Peter just going with it, going “I Am Spider-Man a la Stark with Iron Man? Strange’s line about Peter leading a double life feels like it’s going to be the key theme so either MCU Peter decides to embrace being a public hero or he Spider-Man No More’s to live a quiet life, so Sony can keep making new non-MCU spidey’s or something.

I bet this is supposed to be a relatively straightforward, risky but easy spell. But then as they're kicking it off, Sylvie kills He Who Remains and let's the multiverse branch, and Wanda absorbs all that juice and becomes the Scarlet Witch.
A memory wipe suddenly gets a chaos magic infusion and is applied to the multiverse, and when Peter cancels it, the other movie continuities get pulled over?
Or it really is a time and space fucking spell, and Strange just wanted to flex, act like he still had access to the Time Stone?
I would've liked to have kept Spider-Man as a lower stakes, street level kinda guy but I guess that horse bolted a few movies ago.

Here's my guess for how this movie will ultimately end. It involves a big spoiler from the end of the Loki TV show, so don't click if you haven't seen that.
Spidey and Strange fix the situation and return back to their home dimension. Everything seems normal at first, but then it's revealed, possibly in a post-credits scene, that there's all these big statues of this one dude all over the place, and everyone but Spidey and Strange think it's perfectly normal because they're the statues of the supreme ruler of the universe, no big deal.
The same thing is going to happen in a handful of other movies, like Ant-Man and the Wasp 2. The heroes travel to another timeline/multiverse, and when they get back they come back to a world that isn't quite how they remember it. And that's what's eventually going to lead to Avengers 5 or whatever the next group-up movie will be, a handful of heroes who still remember the world as it is supposed to be, not one with a galactic dictator.

I have a weird feeling this is less about the MCU and more about opening up the Sony toybox...
