Is it bad/dangerous (in the "will I cause damage" sense) if I remove some grout in my bathtub today and don't replace it until Saturday?
Long story short: My grout is gross and is apparently uncleanable at this point. That's from a professional cleaners I had in here. I've replaced grout before but I don't have time to get the materials today. But the building I live in is doing an inspection tomorrow so I need a solution. Is it OK to remove the grout and leave it for a few days before I can regrout?
This is just the bottom of the wall/top of the tub connecting corner.

If it's an apartment, they should be replacing the grout themselves. That's a maintenance item.
I don't disagree, but they apparently think it can be cleaned so they did not suggest it needed to be replaced. However, the professional cleaners they referred me to said it cannot be cleaned and would need to be replaced. So I'm taking a third option and ripping the shit off the wall myself. I honestly want to deal with the building management as little as possible and a small amount of grout is cheap and easy to apply, so whatever.
They are coming tomorrow morning so I just want this done by then and then can regrout when I can go get supplies which will take a couple of days.
Make sure it is dry before applying grout though, in a pinch you can apply metholated spirits lightly and it will evaporate some of the water around the tile.
It sounds like you have done grouting before, so you should be okay.
