I got around to watching the Austin/KO match. Two things: 1) whoever approved the rapid-cut camera changes needs to be fired, and 2) does anyone know if this was a No-Holds Barred, Anything Goes match? Because I'm not sure I heard the commentators mention it every minute or two.
Other than that, it was fun (and scary) to see Austin in the ring again.

"Unnecessary video packages" isn't fair. WM has the highest casual audience of any show they put on (except maybe the Rumble but I bet that's a distant 2nd). That's who those are for, not us.
Could fat have been trimmed? Absolutely; their time management has always been shit at WM. And I'm not saying having less of 50% of the run time be bell-to-bell is great -- although a match was cut/bumped, which is both part of the problem and a victim of it.
The video packages are fine but...jesus fucking christ I saw that Sheamus Snickers commercial probably a dozen times. Commercial packages constantly between matches for their biggest show of the year was exhausting.
There's also never any justification for a Baron Corbin match to be on Wrestlemania, or the tag belts being defended against a thrown-together tag team. If they're trying to appeal to casuals you'd think super-cut Finn Balor or Richochet richocheting about over the Usos who have been in the title scene for like 10 years and Rick Boobs and Nakamura. With Covid restrictions no longer in play there's no need for Mania to be spread over 2 nights or for such obvious tv matches to be on the main show.

I don't think it'll work that way...Cody got it because he was one of the founders of AEW. CM Punk and Danielson weren't on the roster yet, not to mention the horde of other guys in prominent positions already. Unless it's a major name like Kevin Owens or Sami Zayn (who both resigned) there aren't really many midcard guys left who would be instant impact in AEW. But there's enough roster bloat thanks to their signings that some AEW guys could definitely get that pop.
Yeah, Cody got a good reaction and special treatment because he had cachet. Anyone lost in the midcard shuffle at one company who jumps to the other and just ends up lost in the midcard shuffle there too is not going to get the royal treatment on jumping back.
I'd imagine Kevin Owens feels pretty happy about having the first Stone Cold match since 2003 and presumably having the last Stone Cold match, as the main event of a Wrestlemania. The match itself was fine for what it was, and, you know, above all else what it showed was that they trusted Kevin Owens to pretty much carry this entire feud on his back and also to wrestle a pretty safe and still competent match with, you know, one of the biggest legends they've ever had.
For all the booking slights we feel happen, I think WWE more than understands how important Owens and Zayn are to the future as two guys who will be forever over with the audience and can move around the card when needed. They might actually be the two best wrestlers in the world but will never get that recognition for a multitude of reasons.
