How does that factor into me, a dumbass, who brews their ice tea cold?
When I make iced tea I make about a cup's worth of hot tea, usually extra strong, and then I dump a lotta ice in there along with a few more cups of water (plus some citrus or aromatics or wev, depending on tea type), and stick it in the fridge for at most a few hours, after which I take out the tea (always loose leaf, enveloped in a strainer ball) so it doesn't oversteep.
This method gets the flavour and level of caffeine release I'm looking via hot extraction, plus some additional layers on the tail from the longer cold steep. But you can also just stick tea in cold water and let it sit in the fridge, that works fine.
I toss 100g of leaf into my big ol' tea leaf cage, add 6 liters of water to it and toss it in the fridge. Do this about every 3 days, since I go through the shit so fast. I don't know what "oversteeping" really means, does that mean I'm getting more caffeine?
You might also be able to mitigate it with something sweet if you do oversteep the tea. At least that's why I mix it with lemonade to begin with, otherwise regular tea is too blech if it's not a green tea.
Means you leach too many tannins so it tastes very bitter. But its harder to do with a pure cold brew.
Hmmm, I guess for me and this particular tea, that's a good thing. I like the bitterness of tea, especially when it's offset by floral or citrus notes.
They only seemed to have one package of matcha that wasn't packaged with milk powder in it it's tian hu Shan branded something or other. 150 grams in this box for like 6 bucks so not a bad price

I've not tried it yet, but this has been recommended to me as a good, reasonably priced matcha.
The whisk is more Traditional, but honestly one of those handheld milk frothers works just fine.
And you can smoke a mothafucka.
I'll probably mostly be doing latte versions of it so I'll probably get by with an electric whisk.
