Gingerbread Recipe Sought!

I've made a number of gingerbread houses over the years, using a modified family recipe, ones found online, but I figured that this year I'd ask for a little assistance from the forums.

Does anyone have a recipe they've made and loved? While this will be going into a house shape, it need not be very structural, as it'll be devoured roughly a day after it's built. Obviously a cookie so soft it falls apart in your hands isn't ideal, but it doesn't need to be structural competition grade either.

I am hoping to procure ingredients tonight and bake/build today/tomorrow, so we're on a bit of a timeline, but I figured it was worth a shot!

    This is my excellent gingerbread man cookies recipe but honestly they might be a bit too soft to work as a house. But I figured I'd post it since it is a loved gingerbread recipe.

    1 cup butter
    1 cup granulated sugar
    1 cup molasses
    1 egg
    2 tbsp vinegar
    5 cups all purpose flour (625g I think?)
    2.5 to 3 tbsp ground ginger
    1 1/2 tsp baking soda
    1 tsp ground cinnamon
    1 tsp ground cloves
    1/2 tsp salt

    Cream butter and sugar. Beat in molasses, egg, and vinegar.

    Sift flour and stir in the rest of the ingredients. Blend dry ingredients into the batter. Chill in the fridge.

    Preheat oven to 350 F. Roll out dough to 1/8 inch or so. Cut into your prefer shapes. Place on cookie sheet and bake 5-6 minutes depending on the size of the cookies. Maybe for house pieces, you'd bake it longer. Let it cool completely before adding royal icing.
