You can't see it on Twitch either, but lots of streamers have sub counters on their screen, especially during subathons. There are tracking sites that count subs for both Twitch and YouTube but they're not super accurate once you get into big numbers or people subbing offline.
Yeah, YT seems to forbid talking about paid membership numbers while Twitch doesn't, so we know a lot more about Twitch subscriber numbers. Best we can do on the YT side is see the number of members they've had at some point based how many emotes they have, since the number allowed is gated by the number of members on their channel. For example, someone with the fully capped out 54 emotes must have had 5000 members at some point to unlock them.
