Temper your expectation. I’m still under level 70 on every of my gushies.

Maybe but Echoes has a twofold problem. First is that it's heavily reliant on your ping for procs to the point that if you don't consistently have under 100 you shouldn't touch it, and second is that it shares a drop table with Vermilion which is a set that is only good for Xiao making it highly resin inefficient. You can't Strongbox either of the two to boot.
Looking at a Google docs spreadsheet put out by Keqing Mains, a group of theorycrafters, these are the best sets for a DPS Ningguang
1. Archaic Petra 2 pc (only from Strongbox) and Noblesse Oblige 2 pc OR Emblem of Severed Fate 2 pc OR +18% Attack set 2 pc
2. Thundersoother 4 pc IF Electro will always be present on the enemy OR Lavawalker 4 pc IF Pyro will always be present on the enemy.
This is what I'm using https://docs.google.com/spreadsheets/u/1/d/1gNxZ2xab1J6o1TuNVWMeLOZ7TPOqrsf3SshP5DLvKzI/htmlview?pru=AAABd4N-fLk*X-bMgWoyQtpHPIS7FN1hTQ# . Really useful spreadsheet, breaks down what works and more importantly why, with various reasons that break from the standard *just get this set" advice. Also does the same for weapons.

Sort of. I haven't made any characters mechanically, but I have thought about what kind of character I'd play in some of those worlds. Though I've only come up with:
Fantasy High: Bard band kid (I was a band kid in HS) or a politically active teenage Paladin (I like the idea of a protest sign board as a shield).
Neverafter: The Pauper from Prince and the Pauper, with an added flavor of Man in the Iron Mask. Basically, the Prince imprisoned the Pauper and now the Pauper is after revenge. No idea on class, Hexblade Warlock or a Blood Hunter might be cool.
When you first fight him, it's stupid how much hp he has. Eventually it's stupid how he goes invulnerable to get to the next phase just as you are getting your damage going.
Eventually you get to the point that you can just melt him in seconds, but getting there takes practice and building up characters. I do enjoy that you can change up your team to get around his affinities each week, or you can just ungabunga a bit harder.
Also the music slaps.

And then people kept filling out the surveys with “coop sucks”.
I did think of that one. They're similar in that they both have a lot of HP and have attacks that are difficult to avoid without a shield. The primo doesn't have any invulnerability, though (outside of the beginning when it is getting up), so it becomes much more enjoyable when you get stronger teams and can just wipe the floor with it.
The God of Wisdom, everybody.
Oh shit. I know what I'm watching tonight

Ohh yeah, that one's annoying. The good side is it doesn't matter what kind of shield you have when you get to that phase where he's charging his bullshit. A level 1 Diona shield will reflect the damage back at him.

Also, Brennan is an extremely good storyteller as a DM, but if I was going to identify any flaws with his skillset, it's that as good as he is at coming up with cool setpieces for his D&D fights, I think he fucks up the math on them a bit. There's a fight in Fantasy High s2 where he just gets extremely bogged down in how much he's thrown on the table, and it's one of the few fights that's not edited so you can tell. That's not a huge knock on him, mostly because he's very good at adjusting on the fly and letting players improvise in fun ways.
For fantasy high, I came up with a Changeling sorcerer everyone assumes is a theater kid but they aren't.
Neverafter is a kind of fucked up tinkerbell, who had her wings destroyed, but can still fly because she has Peter's shadow grafted on. Soulknife Rogue

I'm almost tempted to say good ol' fashioned period sexism.
"Can I be a knight?"
"Hahaha, maybe. Go make me a sandwich first and then clean up around here."
But that's not all that accurate, since you've got Jean, Eula, Amber and even Klee, all as either knights or officially in the order. In fact I think the only main character that is male and in the order is Kaeya, and maybe Albedo if he counts.
Noelle isn't a knight because she is way too reckless and sacrificing, which has nearly killed her in the past like when she decided to mount a one person rescue on Dragonspine without appropriate preparation.
Her strength isn't in question at all, but a knight that is constantly flinging themselves into danger regardless of their own well-being is just a liability and Jean knows it.

Are you guys 100% sure? I remember the way to the boss opening after I had done a fairly long quest, waaaaaaaay waaaaaaay after I got the chasm light thingy. It was several days of half-assed exploring and stuff, I'm pretty certain.
There's a boss at the end of the story quest but I'm pretty sure the repeatable boss isn't blocked off by anything. I only went looking after finishing the story quest though, but it was on my map before then.
