JJK manga spoilers
Because fight, in itself, was cool, because it showed something unusual for presented power system.
That the fight itself, ultimately, was pointless storywise? That's completely separate issue.
Impressions having read the whole manga:

But those arcs got ditched pretty quickly, and at this point I don’t have much hope that we’ll go back to more character-driven elements before it wraps up

He actually treats like 90% of his characters equally harshly
Full Manga JJK Spoilers:
Mai: gets stuffed into the fridge so Maki can get stronger and sadder
Miwa: relegated to "useless" jokes
Witch Student: zero screentime, zero story relevance
Hana: gets a backstory only to explain why the plot turns her into an idiot during Sukuna fight
Mei Mei: amoral and almost definitely a pedophile
Nobara: died for cheap shock value
Yuki: died accomplishing nothing to show that Kenjaku is, in fact, strong
those two Geto followers: murdered to show that Sukuna is, in fact, cruel
Tsumiki: stuffed into the fridge to torture Fushigoro
Yaorozu: dies to show that Sukuna is, in fact, strong
Itadori: another protagonist from Ichigo Kurosaki and Midoriya Izuku school of "has barely any screentime in their own story" shonen hero
Fushigoro: no character development, no personal arc, gets some fights and then gets tortured by Sukuna
Inumaki: zero screentime, zero story relevance, loses his hand offscreen
Panda: exists only to suffer and lose fights
Yuta: HOLY SHIT MAYBE A LONE CHARACTER THAT DOES STUFF wait he probably will get worfed next
Nanami: death by being a shonen mentor and to make Itadori sad
Higuruma: Nanami 2.0 in the making, he will surely die soon
Kashimo: the biggest waste of space in the entirety of this manga
Kusakabe: zero backstory, zero story relevance, AND YET HE BECOMES THE LEADER AND PLAN MAKER SOMEHOW!?!?!
Choso: HOLY SHIT one of few characters that receives character development
Todo: loses his hand and cursed technique, so he disappears from the story completely
Yaga: zero screentime, then dies to make Panda sad
Takaba: finally, some character treated well
Ui Ui: grooming victim, also barely any screentime
Sumo Man and Katana Man: not even characters, just walking and talking plot devices
Ryu Ishigori: dies to show that Sukuna is, in fact, strong

A master of the build up.
I'm going through Monster again right now, and it's not only holding up but I think I'm liking it even more now than when it first aired.
It does so well with "every arc has an immediate crisis, but it all serves the overarching crisis in the background" storytelling. There's some big The Fugitive vibes going on. Urasawa's character designs are amazing, and it just feels like a live action TV show that was animated (which makes sense, since I can't imagine a J-drama having the budget to film on location in Germany). Also Mr Grimmer fucking rules.
I just wish any of the dubs were available on Netflix. I would love to finally listen to the English or, even moreso, the German dub.

You've forced my hand. Behold the ultimate hammer in Warhammer: Sug-hammer!
I'll stop with the warhammer posts after this, but there is a Warhammer thread in SE++ for general talk about all forms of Warhammer (fantasy/40k/lore/hobby/everything), it hasn't been active in awhile, but don't let that stop you. There are more focused thread in Critical Failures for both Age of Sigmar and 40k where we talk about current news, playing the game, and share some hobby progress.
I'm not sure what most people think about Warhammer. It's expensive (there are ways around this, but just the painting supplies alone will cost more than a video game), and there are certainly some idiots in the hobby who try to ruin it for everyone else. That being said, Games Workshop has been making strides in making the game and their stores more accessible and welcoming, both with explicit statements about who the hobby is for (not fascists!) and with smaller-scale entries into the hobby (i.e. skirmish games and board games).
Personally, this is where my (already limited) anime watching time has gone: I'm trying to get through my backlog of unbuilt/unpainted models to start a local Kill Team league. I had hoped that in going back to school I'd have more time to work on the hobby, but that has very much not been the case with an engineering degree. On the upside, I am getting a 3D-printer as a work/school expense and working on an LED lighting display with built-in sound boards as a "school" project. Eventually, I'll get some more time to play and watch anime again.
And, of course, Satania is the best.
