Eh, honestly, I tend to ignore "ages said by the editor in external materials", because they are universally nonsense.
Did you know Yoko and Kamina from Gurren Lagann are stated to be like 15? And Seto Kaiba is supposedly 16? Except of course they're fucking not, those people are not written like highschoolers. Kazuma is very much written like the college dropout he is. So on.

I would certainly be impressed by an adult genius if his name was Billy Quizboy. Like what's his story? Was he born a genius? Or did he feel pressured by his family name? Or maybe his real name was Sammy Simplechap, but he was shunned by his clan for not following in the footsteps of his elders? So many questions.

S4 really dragged for me but I’m glad we watched it all. It’s just like they all have filler monster of the week episodes but every other season paces story development in between them and 4 literally just had them take up the bulk of the middle episodes.
S5 was mostly good about pace. There was one part really starting annoying me
The finale was great and paid it off but it’s hard to know until you get there

We might do crystal at some point but I vaguely recall that I didn’t hear good things about it
Crystal removes every ounce of personality from the series. Do not watch under any circumstance.
It's more that high school is a combination of:
* A common life experience for most of the audience, who is either going through it or has gone through it;
* A setting where the characters have a degree of autonomy while not having a lot of responsibility, allowing for shenanigans;
* A setting that provides a bunch of pre-built story arcs, conflicts, and structure (see Red's recent Tropes Talk on superhero school for more details);
* As well as a lot rather...distasteful (to put it very fucking mildly) cultural focus on youth and the past regrets of the writers;
* In addition, if we're talking about tween-focused media (like shonen and shojo manga/anime), there's the aspirational aspect as well, with the media building on what is for the target audience a major milestone coming up.
I'm pretty sure they didn't change their school level, but Darien/Mamoru are both in college.
I guess the idea was portraying the "ooh cool college guy!" fantasy without thinking about the creepy ramifications. (They don't officially become an item until later, but still a, what, 4-5 year gap?)
He said it reminded him of the old TTRPG groups he was in decades ago, fantasy novels he read when he was young, and a few other anime series we've seen together. Exactly his sort of thing, but he's also just as impressed as I am with the calibre of the animation, pacing, and sound design.
Looks like they're doing the S3/S4 ending/opener movie thing again, which I'm down for, though this isn't nearly as hype as S2's ending.
