You'd be looking for one shots or pilot chapters. Oneshots are self-contained short stories in manga form, sometimes a collection of them. Pilots are a little more difficult to find, but they're basically the pitch chapter made for submission to a publisher in hopes of being picked up.
If you want truly one volume stories in manga form though, you may want to look into doujin. Doujin tend to be synonymous with porn but they're really just indie manga. Some are fanfiction, some are original, a lot of them are porn not gonna lie, etc. The real issue with doujin is the difficulty of reading it, since it's all in Japanese and would require a fan translation. There's a ton of doujin but very little of it is translated.

A Silent Voice started out as a very good single chapter story before it got serialized, but I'm not sure if that single chapter is buyable?
Generally speaking, though, most manga is serial and if it's got enough for a volume then it's probably got enough for eight (unless it got cancelled early on due to poor sales of volume 1, in which case volume 2 is rushed).
Independent doujins sometimes end up being a complete story in one volume if only because that's such a different ecosystem, but those are also very rare to see officially translated and, yes, most are porn.
You buy the entire Nausica Valley of the Wind manga as a 3 book set on amazon. Definitely worth it.
Akira is a big 6 book set. Also worth it.
Sorry for not being one book, but close enough
Best example I can think of for a non-H doujin author is Yoshitoshi ABe, character designer for Lain, NieA_7, Texhnolyze, and Haibane Renmei (the latter of which actually started as a two-chapter doujin before immediately being picked up as a full anime)
Akira the manga is amazing, and a real trip.
Another really good small run manga is Pluto - 8 volumes, complete story. It's heavily (Very heavily) based on an Astro boy storyline, and it's real fucking good.

(These are obviously also very popular among doujin authors as a way to compile and sell all their previous work. Or just as a way to get their work published in the first place, by joining a larger anthology themed around horror or a specific fandom or theme or whatever. Again, though, very few official translations.)

There's also an Italian boxset for Gon but I just looked it up and it's out of print. The beauty of Gon though is the only words in the books are the titles and names of the animals appearing at the end of each chapter so you can get and enjoy the manga in any language.
I was at work so sue me
Studio Nue worked on it too, I believe.
And the classic from Gurren Lagann.
I love this version cos the Opera is singing about despair and begging god to save them from the apocalypse and the rap is just all fuck that FIGHT DA POWA and its lit. The two opposing lyrics are essentially clashing against each other and the rap ends up winning.
Like it way better than the non opera rap version. I recommend reading the lyrics for the opera.
Cause... Well, I got a good one for the thread:
I got a better one, from the same show.
The entire OST is literally flawless, though.
It was suggested I watch Deca-Dence tonight, so I watched the first two episodes.
Ep. 1
Okay, we got a post-apocalypse situation with a transforming mobile fortress city against an army of bugs that have killed most of humanity. Let's do this.
Ep. 2
Wait, hold up.
Charming as hell character design
I don't remember anything about 2040's music aside from the OP, but then, I really disliked it. Making Nene blonde has to be illegal in several countries.
It's definitely not perfect, but it's got a lot of heart in what is often a cynical corner of the anime world (Gargantia, I'm looking at you)
You saw through my clever guise!
For all that SEED and it's sequel get dragged on, the one consistent praise I've seen for it is the music.
edit- and here's my contribution to the soundtrack talk:
