Barely a sliver, but also probably more than enough to figure out whether the game is for you.
Kind of depends on what you do with it, and what's going on in the game. Unlike most MMOs, the best content here (in my opinion, anyway) is PVP created by the players. So it highly depends on what's going on during any given day. If you're on when our enemies are attacking (or when we're attacking our enemies) then you might get in on some incredible fights that would be considered "end-game content" by a lot of people -- like killing a Titan, or like last night where our combined allies kicked a BoB fleet's ass up and down multiple systems. In a two week trial, you could easily take part in those kinds of battles as a frigate tackler, where your job is to lock down those expensive ships our enemies fly while other people blow them up. It's an essential role and it puts you right in the biggest fights.
Of course, you might run into a lag wall (which happens plenty once the fleets get big enough).
And you're not going to get a chance to fly every ship in a two week trial, or more than the frigates and cruisers of a particular race really (which is about 8-10 different ships). I've been playing since December, bought an older, second account (legally, for in-game cash), and I still only fly one race's ships and have yet to set foot in about half their ship classes.
The PVE content in Eve is pretty boring in my opinion, and it's not the best way to spend your trial time. The missions are somewhat limited in number, and don't really LEAD you anywhere. Mining and grinding NPCs for cash is repetitive. If you're particularly into spreadsheets then you might enjoy production or trade, but those take some cash and time to fully get into.
Basically, you're not going to get a chance to experience most of the game -- most of us that have been playing for months still have yet to experience most of the game, because there's SO MUCH to do. And the PVP is constantly unique -- it's not a battlegrounds type of situation, there's different goals, fleet composition, and consequences to each fight. But you can dive in and get a taste of this end-game PVP within a few days, and we're happy to help get new people setup to do so.

FightTest: Not sure why, but the GF wiki is down at the moment. It does that from time to time and it's usually temporary, but that definitely has info on suggested combat builds.
Frigates are actually the smallest ships in this game. It uses the space nerd classification rather than the naval one.
Yes. The smallest player-controlled combat ship is a frigate. In Eve, "fighters" are large, robotic combat drones. However, as the OP points out, Eve does not play like Wing Commander or X-Wing.
You can start off with a tech 1 frigate and modules on your first day, and then train into advanced "tech 2" frigates" such as interceptors (fast and fragile),assault frigates (slower and tougher), and covert ops frigates (cloaking devices).
If you enjoy the faster, smaller ships, you will be welcome in any fleet. Flying smaller ships can be a specialty which many don't care to master as they bee-line for battleships.
Naval Nerd Edit: Frigates in the modern world overlap with destroyers and are some of the smallest surface combatants which could be considered "blue water" or ocean-crossing. Corvettes and Patrol boats are mostly coastal craft. Classifications these days are more for politics, posturing and roles than simple hull size.
