They've shown an unwillingness to release these games in the US in the past, except IV. I'm leaning towards saying it's slightly unlikely that we'll ever see them.

It should use the same engine and be cross compatible. Breed ChocoSlimes and Bahamut Lords using Wifi and a copy of DQM:J and FFM:J
Seriously though, they fucked the US community pretty hard after they fired all of Enix USA and just renamed Square USA. DQ fans have gotten the shaft ever since -- but maybe, just maybe, the reason is that they knew about these remakes and were going to announce ports.
Not only that, but the version released on the GBC is the best version of the game ever released. Loads of new content and updated visuals, and a hella fun beginning mode for choose your character's disposition.
The story about the Japanese law is an urban legend, from what I've heard. I can't confirm, not being a lawyer in Japan. You can find about as many accounts spreading the rumor online as you can confirming its status as an urban legend. VI, VII, and VIII were all released on a Saturday in Japan.
IV is good. VI is excellent. V is so-so. I played it for completeness' sake, but I wasn't really impressed.
DQ VI, Bahamut Lagoon, and Seiken Densetsu 3 compose the holy trinity of SNES games that should have been in the States. If you can find a way, play them.

Was The cursed King representative of the series as a whole? I didn't get on with that game, but I don't want to miss out if it was just a rogue duff member of an otherwise super great series.

It's fairly representative of the series as far as I can tell. DQ is basically the "classic" JRPG perfected. You don't see a lot of innovation introduced in the series, unlike Final Fantasy, etc... which tend to change things up a bit.

Indeed, I heard a long time ago that a fair amount of the updated stuff was from the SNES version. The graphics are actually better in that version, of course. I mark it down a few points because I can't take it whereever I go and the fact that my Japanese comprehension is sub par.
I was impressed by V. Everyone says that DQ is never innovative and that may be true of the gameplay to an extent. However, the story in all the DQs I have played has been presented in ways that no other games have attempted before or since. V's story was told in a really cool way that I just did not expect as I played through it.
I've wanted to play VI for years. And IV's story sounds so intriguing. For these remakes, I am very anticipation.

I hear the 5 remake for PS2, which the DS 5 will no doubt be based on, is liquid sex condensed in DVD format.
