So what's the best program for recording streaming audio? The reason I ask is that I'd like to record Sirius Satellite Radio as it streams online.

I'm pretty sure you can set
Audacity
to record "what you hear."

Yes, pick "Stereo Mix" as your source, in the drop down which is on the same toolbar as the record button.
I think there are a few "automated" tools for this as well, which tag and name your files.
