I just got a 360 yesterday, and I was wondering which demos are fun. My internet is kinda slow, so it takes a while to download the gig+ demos, so I was hoping someone could help me by telling me which ones are worth downloading.

Yeah, there's a lot of chaff to separate in order to get to the wheat. But it's worth it to leave your 360 for about a half-hour and let it download all of the hojillion XBLA trials, then delete the stuff you don't want because it'll already be marked as downloaded. That way when new stuff does come out, it'll be a nice surprise.
Avoid playing Arcade demos unless you want them time to your gamertag forever (annoying if you are an obsessive compulsive completionist, or don't want multiplayer invites to games you don't own).
Some oldies and goodies;
The Fight Night Round 3 demo is pretty good, delivers a lot of gameplay, I had it on my harddrive for months before playing through the full game.
Also, Condemned, a great game, can be found in the bargain bucket now too.
And as others have said, SEGA Rally, Eternal Sonata, Bioshock, Dead Rising, Crackdown. All great demos.
Flatout, skate and Crackdown have probably been my three most played demos. Crackdown i deleted when i got the full thing, but is absolutely perfect for just wasting time, and skate (which you've already played) is much the same. Flatout i just love belting around the tracks and watching all the carnage ensue.
And i'm one of those that enjoyed the Timeshift demo, although i've not replayed it too much. It's not the best thing ever, but certainly a vast improvement over last year's demo, and good fun, of not original.

I can't think what other demos are out there. Fight Night is good, got my brother hooked on the game (which i then picked up for dirt cheap, and enjoyed).
Crackdown gives you some serious replay value for your nonexistant demo dollars. Seriously, that demo entertained me for a week.
The skate. demo is replayable and fun, though the timer is a tad irritating because it's rather short.
The first Need For Speed demo (I don't recall which title) had a surprising amount of content, something like three cars and three different races on differing courses. That was one I went back to a lot. Lots of stuff!
Test Drive Unlimited is also really good as far as wealth of content in a demo is concerned. I didn't car for the feel of the game overmuch, but DAMN did they put a lot of real estate in that demo.
The Bioshock demo is awesome, as is the game, but if you're looking for stuff that will give you lots of play time, this isn't it.
The multi-player shooter demos will give you some nice replay value.
Oh, and Lost Planet. Two super cool missions included in the demo, and the download is pretty small. Get this one.
You dont need the Dead Rising Demo, or the Bioshock one. These are compulsory purchases, you dont need to test the game out to see if you like it, you just will.

Hmmm. Is that happening a lot? If I ever get around to upgrading my hard drive, there are quite a few of those older demos I'd revisit. I've not checked on them in ages; are older demos being rotated out of circulation?
The Ninety-Nine Nights Demo is worth a play, and possibly more if you like it (sadly the game itself isn't all that worth-while. They tried to pull off somethings that would have been really impressive, but fell a little short. Hopefully the seemingly-in-the-works-but-as-of-yet-unannounced sequel will be better.)
I thought Amped was fun for a bit.
Monster Madness is another one where the demo is worth a try, but I wouldn't recommend buying the game.
Bioshock is good, as far as making you understand why you NEED to spend $60 on Bioshock right away.
Also, try anything at all on the Arcade that looks interesting to you, and set up your system to automatically download new arcade demos every week.
There are others that escape me, but those are a good start.
Don't download this one. Fun game, yes, but the demo is a waste of your hard drive space. Three minutes of play and it turns off. Boo!
You know, if you replay the demo enough times consecutively, without exitting out of it completely, it starts you in different area of the map, and since you are small in areas where you were bigger earlier, there are different smaller items around to collect.

Also Bioshock, Rainbow Six Vegas, Hitman Blood Money, Eternal Sonata, Lost Planet, Viva Pinata.

I really hope they make it so trials aren't in your played game list next update. That's a big thing to overlook.

I tried the demo.. Couldn't really get into it even though I wanted to. Seems extremely simplistic and not very much fun.
