Except that an Edgeworth game would have practically zero tension to it since everything is on your side anyway. The whole point of the AA games is that you're a pathetic loser underdog who gets penalized for breathing too loudly while the prosecution gets away with murder (sometimes literally).

Edgeworth is the best character in the entire series and this is pretty much a must-buy for me, I haven't even played Apollo Justice.
An "Ace Prosecutor" game really wouldn't be all that much of a departure really. Phoenix's strategy is to prove that his client didn't do it by pointing the blame at someone else, so about halfway through every case you're basically prosecuting somebody.
EDIT: Oh whoa hey I guess that's what it is anyhow. Yeah, again, that pretty much sounds exactly like all the other AA games. Not that that's a bad thing, but the name of the project sort of implied that it'd be some kind of wild spin-off series.
