So I bought a PSTwo on eBay for 75 bucks inc shipping. It was pretty scratched up on the outside but works perfectly regardless. It is the 70012 model, so I am silently distressing about getting the dreaded DRE error (also known as "your-laser-is-fucked-lol-Sony-goatse'd-you") whenever I boot up a game.
I picked up GT4, GoW, SotC, Black, FFXII, MGS3S and Burnout 3.
GT4: It's a beautiful game with some incredible ficticious tracks, but I feel like I'm missing out by not having that 900-degrees-of-rotation force feedback wheel. It controls more like Forza with all the driving aids off which is a good thing, but I dislike using the right stick for analog gas/break instead of triggers. I can't justify the cost of the wheel, though.
GoW: Wow, what a complete disappointment. Bland, boring bullshit. Titties and ultraviolence do not save this game from mediocrity. There's no reason to play this when PoP and other, better platformers and action games exist. Shit, I'd rather play TRL and TRA on the PC with their awful combat than play this game. That Jaffe guy seems nice, but this game is overrated.
SotC (completed): Wow, this is the killer app for the PS2. Yeah, the framerate dips and the camera goes batshit sometimes, but it is just a beautiful piece of art with some truly incredible gameplay. The world is simply gorgeous, but I wish there was more of a reason to explore it than finding the Colossi. They should have added hidden items or something. This game seriously challenges my disdain for Japanese media.
FFXII: I think this is the FF game for non-fans of FF games. The main character isn't a whiny emo pussy (though he does look like some kind of lesbiman), and the combat was finally given a needed facelift. I have always appreciated the massive production values and scope of the FF series, but they have never been able to hold my attention. I dislike the license system (why can't I SEE what all the fucking license squares do?), but the gambit system is rather fun. I really find myself enjoying the more grounded (so far, anyway) story as well.
MGS3S (completed): This is a series I love to hate and hate to love. The story starts out pretty slowly, and as expected travels deep into dumbass bullshit territory. The difference is that MGS3S will make you laugh, and eventually it will probably even win you over. The gameplay and controls are still a little abstract and dated; for example, holding enemies up for items is so tedious and time consuming that you probably won't even bother doing it. There are many little things that fall into the "you probably won't waste your time doing them" category. The camo system is okay, but the food shit is just annoying. It rots so quickly that you'll probably wind up only keeping rations and ramen and such. However, I think the enemies see a lot further which is a much needed adjustment that makes the gameplay much more realistic. The new camera is pretty good and really shows off the incredible and beautiful environments, but I found myself switching over to the old overhead camera on occasion to get a birds eye view (cheap) of the enemies. I wish the new camera would sort of lock behind Snake whenever you run. I LOVE what they're doing with the controls in MGS4; choice = AWESOME, and someone finally talked Kojima's dumb ass into providing multiple control schemes to suit varied tastes. PLEASE, God, let MGS4 get ported to the 360...
Black: Meh.
Burnout 3: I loved Burnout 2 on the GC with all of my heart, and I was crushed when subsequent games in the series did not show any love to the Cube. Burnout 3 is fucking great. I thought I would dislike the new emphasis on takedowns, but they're really quite fun and addictive. Some of the races are downright brutal, though; specifically the time trial runs in the F1 car. You pretty much have to hold down the boost and not make a single mistake the entire time. That's hard. Plus, the aliasing can make it really hard to see what's infront of you.
My brother has been playing Dragon Quest VIII, but christ that game looks mindnumbingly slow and boring.

I agree, SotC is a (slightly flawed) masterpeice with a brilliant story and design, the end is very sad though.
I'll agree on Black. It's so so, If you don't like Black don't try Killzone either. Killzone has good MP tho.
ICO is 7 kinds of awesome even today - surprisingly still fantastic even if it is a first gen PS2 title. Excellent design, great story and unique style.

GoW I really wanted to like, but I just can't get into it. The combat is just not fun, and the aesthetics are so dreary, drab and colorless. How is GoW2 by comparison?

There are. Beat the game and unlock hard mode and time attack mode. Beat hard mode and unlock hard time attack mode. In either time attack mode, for every two colossi defeated you receive a hidden item. White horsie is the bestest.
More incentive to explore? I didn't honestly need anymore exploring in the damn game. Lol...

Ace Combat 5 (and the others): Are they worth playing with the controller? The graphics look great, and I'd totally get them if I could buy one of those badass sticks they're sometimes bundled with.
Sniper Elite: I might check this out on the PC. Looks interesting. Still getting over the WWII overdose, though.
Shadow of Rome: Didn't see this one coming, and it looks pretty sweet. I'll definitely check it out.
Hitman: I liked Hitman 2 for the PC, so I might give this a try.

I almost forgot Devil May Cry 3, if you don't mind the challenge then its pretty good.
Persona 3 has been reccomended quite a few times, but I have'nt had the time to play it.
I reccomend renting out a hand full of games you're not sure about, for every 5 crap games on PS2 there is 1 really good one, you just have to shuffle through them. Hell of a back-catalogue to go through, you will be busy.

What I've seen of Mercenaries 2 hasn't been terribly encouraging. Don't wait, just get the first one.
The Ace Combat games are absolutely worth playing with a standard controller. The planes handle very nicely. And AC5 is my favorite because of a satisfying campaign and great mission design. The only reason to pass it (for now) is if you're picking up Ace Combat 6 on the 360 soon.
I was bored with WWII, myself, but Sniper Elite was a change of pace. Unique gameplay, mostly stealth and sniping and setting traps. And an interesting story premise. It can be a bitch to find on the PC, I hear, but the PS2 version is good.
God Hand is also pretty brilliant if you love brawlers. It’s quite the challenge though, and the controls feel a little fiddly initially.
If you haven’t already played the two Max Payne games, give them a shot.
If you’re looking for RPGs, then the PS2 is pretty awesome too. I’d easily recommend Valkyrie Profile: Silmeria, SMT: Digital Devil Saga (1 & 2), SMT: Nocturne, the Shadow Hearts series and Breath of Fire: DQ.

Having just this week completed ICO I heartilly chime in with the people saying track it down.
Also, definately pick up the Sly Cooper games, I liked them much more than any of the Ratchet or Jak titles.
I also liked the Rygar game, it was really fun and the design of the environments and boss battles were very well done. Game play is slightly like GOW/DMC, but for some reason (maybe nostalgia) I preferred Rygar.
