My girlfriend isn't as big of a nerd as I am, but I'm slowly converting her.
She can't hang in COD4, but she offers great target practice. In the meantime, what other games are great fun to play with a 360 noob like your girlfriend?
So far, we're considering Scene It! Lights, Cameras, Action...
Crazy Taxi is the only game my girl friend has played over the last 5 years we have been together, and she still fires it up every now and again on the PS2.

My wife has been playing Guitar Hero III. I just wish they would come out with a 3rd party guitar for the Wii so we could both play at once.

My girlfriend and I picked up the Xbox 360 about 2 weeks ago and we've been trying to find quality games to play, so far we've had luck with Rayman Raving Rabbids, Viva Pinata and some of the XBLA titles like Bomberman Live, Lumines, and Super Puzzle Fighter 2.
My wife loves Dr. Kawashima's Cunnilingus training .. oh... and Bomber man on XBL arcade
Actualy She did sit down with a bottle of wine and play H3 on easy from begining to endin one marathon sitting. She did Deus Ex 2 in 2 sittings. And Timesplitters 2 and 3.

This was one of the first games my friend's wife started playing with us and she loved it. It seems it was a pretty good "gateway game" too, because now she games with us much more often. It's still mostly games like Rock Band or Scene It, but she wouldn't have even given those a shot (well, maybe Scene It) to begin with.
There is no such thing as a great game for girls, because individual personality matters much, much more than some stereotypical gender bias. Does she like action? Does she like complex stories? Would she prefer something quick she could just pick up and play with you for fifteen minutes? The fact that she's a girl should be irrelevant here, and stressing the point will only lead to the usual faintly condescending "oh, girls like kid's games because they're easy, try Barbie's Horse Adventure!" or "well, women aren't any good at games involving situational awareness, so you'll want to avoid FPS games."
Gaming isn't about gender. I bought my boyfriend Shadow of the Colossus a month or two ago, and we spent a couple of days taking turns playing it. I can kick his ass at Tekken Tag Tournament, but he always wins at Capcom vs. SNK 2. I have a male friend who loves RTS and turn-based strategy games, but can't stand playing first-person shooters, and a female friend who introduced me to Quake back in the day.
Please, don't ask "what games should I play with my girlfriend." It would be like saying "so, I got my brother a PS3 for Christmas, what games should I get him to go with it?" Without the proper context, the question is meaningless, and picking games just because they're simplistic or easy or cute may backfire if she finds them boring.
What genres do you think she would be interested in? What sort of things does she look for in her entertainment? Provide that information, and the answers you get will be much more useful, I guarantee it.

Gears of War co-op. I played through it on the first two difficulties with my girlfriend and had a lot of fun. Even if she isn't the greatest at the game, you can do most of the killing if needed.
Currently my GF adores my new Wii, but looks quite repulsed by the 360 and it's "embarrassing" controller (she doesn't mind the Remote control sitting around the house, but not the 360's).
Obviously I'm currently working on her, but it's a lot, lot harder. It's a much geekier console (which is why I really like it myself obviously). So far I'm thinking Lego Star Wars will work well on the 360, along with GHIII.
I haven't fully explored the Arcade, but I suspect a lot of goodness lies there, Catan especially will go down a treat. Isn;t there a music fireworks game? That should be great too.

My ex and I used to have so much fun playing Soul Calibur 2, especially the team battle mode that lets you each pick 8 characters for some really epic battles that even she could win despite being a total newcomer.
This one brought me, the mrs and the farther in law together every night for weeks..... we where playing until the wee hours (4am +) just to farm some more sweet loot.
I was the Ranger, Mrs the cleric, Father in la Barbarian... we played both Norrath games 3+ times through.
The games where utterly mindless but the team element really made for some great sessions.
Allow me to drift a bit off-topic but me and the mrs were playing ICO today as co-op and that was a blast. Definetly worth investigating for some ps2 co-op.

Mortal Kombat: Armageddon (custom, robotised version of her sold it)
Champions of Norrath
and Burnout, just for the crashing.

In a move of irony, you forget the game that is in your sig. My girlfriend absolutely loved Kotor, and vicariously is enjoying a romp through this.
Shouldn't you be the one playing that game and not your wife?

My girlfriend has the attention span of a 2 year old the moment she picks up a controller. She also dislikes games more because I like them so much.
