So I got the orange box and much as I would like to, I can't play episode 1 and 2 caught my laptop can't handle it and only having 5 gigs of space left is taking a toll on my hard drive. How do I uninstall just the episodes?

Pretty easy. All you have to do is right-click on the game title and "Delete local content." Then it'll get moved into the Uninstalled section of your games list. When you want to put it back on, just right-click and hit Install.

Or when steam is not running, simply delete the .gcf file in Steam\steamapps folder.

Either works, they pretty much do the same thing.

Okay, now if I wanted to take all my steam stuff off my laptop and move it to the desktop I would build in the future, what would I do.

Just uninstall form your laptop and install Steam on your desktop. all your purchases are saved to your account on steam. so once you reinstalled that on your desktop, you just reinstall the games as normal.

Steam also has a backup option, which will let you burn a copy of a game or movie to a cd/dvd so you don't have to download it again.

If you don't want to redownload all that stuff over again (God knows I don't, on my connection), hit Backup Files in that right-click context menu. It'll open a wizard with how big you want the chunks to be, then you can move those over to the desktop, run the executable after Steam is installed, and everything will be ready to play.

EDIT: ninja'd. Why must I be so verbose?

You could also just copy the .gcf files from one drive to another. Those are the actual game files. You can't access them from steam unless that steam account is able to. But those are the files that it downloads. The game folders are created on your first run of that game, so you only need the .gcf files.
