What to go with Minestone?

Ok, so I'm going to make Minestrone soup for my moms birthday in a couple weeks cause she loves it. However I dunno what else to make to go with it. I was thinking I would make it for dinner but the soup doesn't seem like enough, and some bread doesn't seem like enough either. Maybe it is, I dunno. Just lookin for some help, Ive already got a recipe for the Minestrone so I'm set there.

    Just get a big crusty loaf of bread, maybe sourdough to go with it. Cheese would also be good.

    That should be all you need.

    I'd say make the soup the main course, with the crusty bread. Then you can also follow it up with either a favorite dessert of hers or some sort of italian dessert.

    Also, you could do a small appetizer but I am not sure what would set up the soup very well aside from something kind of rich (like a little bit of pate or something) that would allow the following soup to kind of cut through it. Cheesecake following could also cover this base.

    It just depends on how much soup you think she will want to eat. If she eats huge bowls of it because she likes it so much, you may not need it. If she usually only eats small bowls, you will need other courses.

    Former cook in an Italian restaurant here.

    Minestrone is one part of the big three: soup, bread and salad.

    Start with a big salad with some oil and vinegar, then serve the minestrone with some crackly bread. You've got a meal.

    Allright then, the consensus seems to be bread and a salad! Well I'll go with popular opinion and plan on doing that.

    Also: I was planning on making a cheesecake for dessert. Haven't decided on what kind to make yet, but I've made a couple cheesecakes before so I kinda know what Im doin with em. Im willing to take suggestions on any that you guys have found that were awesome.

    My favorite way of making cheesecake is to have a layer of crushed oreos on the bottom for the crust and swirling in rasbery preserves on top

    Well, my dad does a key lime pie cheesecake which is pretty good... but I don't think that would really go with the minestrone soup / salad / bread combo. Which is making me hungry now. I'd go with a regular cheesecake, maybe a graham cracker crust, and either some berry or chocolate topping dripped over it. Simple, classy, delicious.

    p.s. - I don't know how other people do their vinaigrette dressings but I like mine with about two tablespoons of oil to one of vinager, and then a spoon of dijon mustard. Some romaine lettuce, maybe a few small tomatoes and a bit of onions, it's ready to toss.
