How to author a dvd

I think "author" is the correct term. Basically, I want to be able to make an iso consisting of the appropriate Video and Audio TS folders from a given .avi instead of making it from the dvd directly. I usually did this with NeroVision, but it takes forever and it doesn't save the .iso for me to use later. If anyone knows how to make Nero do this, that would be awesome. If not, feel free to recommend any software that can.
Also, I have a movie split in to two .avi's that I need to slap together and re-compress them down so they'll fit on a dvd. A friend recommended VirutalDub to me, but I can't seem to get it to open any of my .avi's and I'm not really sure why. Any software handy for that?
