I think Culdecept Saga can be played one-handed. If I remember correctly, you only really need one of the sticks to play, and you can select things by just clicking the stick in.
For the Wii, most of Zack & Wiki and Warioware: Smooth Moves can be played one handed, and Trauma Center: New Blood has a one hand remote-only control configuration.
Any DS game you can play entirely with the stylus, including:
Final Fantasy chocobo tales
Final Fantasy 3 DS
Any Advance Wars for the DS
Professor Layton
Gunbound
Guild Wars (can play almost entirely on the keyboard, or entirely on the mouse)
The Wii marble rolling games (monkey ball, koropinia, that mercury one) are all single handed and extremely lazy games. You don't even have to push buttons most of the time..
Most of the asian MMOs are designed to be playable one handed so that they can sit in internet cafes and play, whilst chain smoking with their other hand. Of course, they nearly all suck. Maybe try perfect world?
And i can't stress Professor Layton enough. Bloody fantastic game (got it the other day).
EBA would be fun with your wrong hand too, even the easy levels would be hard.
You could try some old-school adventure games.
Beneath a Steel Sky is free and runs perfectly on ScummVM. Just google it.
If you have the chance, check out the old Monkey Island and Indiana Jones games, on the grounds that they are so awesome

Nothing. Aside from it being bastard hard, that is. The tilt control and physics are spot on, there's a huge amount of creativity and variety in the level design, and it should be dirt cheap by now. Oh - and despite being a PSP port, it's actually rather attractive in motion.
Of course, as you're controlling a blob of liquid rather than a marble, you might prefer the feel of Kororinpa instead.

Do you have a more than 3 button mouse you can assign commands to? Set one of them to spacebar and go play baldur's gate style games? Just playing bg2-tob will last you till you heal.
